Black Bean Veggie Burgers

Ever since I wrote the post about Boca Burgers Exposed, I have been making it a mission to create easy veggie burger recipes.  Like these black bean veggie burgers.  You can read about the Boca Burger post here.  This is a burger recipe we have been making for a long time, so I thought it was about time to get it up on the blog. These burgers provides a nice alternative that even older kids should be able to sink their jaws into.  These black bean veggie burgers would be great on whole grain bread, in a sprouted corn tortilla or served over quinoa.  The key to making this a tasty dish is the caramelized onions and the crispy outside.

This recipe makes a lot so you will be able to freeze some.  That is what we do.  These would go great with my Healthy French Fries.

  1. Thanks! I figured but wanted to double check! We are making these tonight but with a couple substitutions due to allergies.
  2. This might be a dumb question but do you just soak the dry beans or do you cook them all the way through before putting them in the processor?
    1. No questions are dumb. :) We soak the beans overnight and then boil them in the morning until they are soft. Usually about 15 minutes. If you were doing a crock pot meal, all you would need to do is soak the beans overnight. They will get plenty soft in the crock pot. Just for future reference. :)
    1. I have seen some decent versions of whole wheat panko breadcrumbs at the health food stores. Since writing this post, I have started to make my own from bread scraps. I just collect them in the freezer and then dry them out in the oven.
    1. I'm sorry, I must have missed your comment. I freeze them in a container and put parchment paper in between each row. Just let them cool completely before putting in the freezer.
  3. Mine don't look like yours. Did you put the breadcrumbs on the outside of the burgers or mix in? I mixed it in, since it said to add the rest of the ingredients into the bowl, but am wondering if that is why mine looks different?
  4. I made these last night, and the taste was really good. Mine turned out very dry. Any ideas? I wondered if cooking them for a shorter period of time in a skillet on the stove would preserve some moisture. I've been following your website now for 6 months or so and love it! Thanks!
