Strawberry Banana Baked Oatmeal. If you have been reading this blog for a while, you have probably realized that I love oats.

That is why I have so many granola recipes on the blog.  I also love to bake, much more than I like to cook.

This strawberry banana baked oatmeal is just one thing I made the other day.  It’s so good and a great way to eat oatmeal on the go.

I love making big batches of baked oatmeal that I can pull out of the freezer for quick breakfasts.  The strawberries and banana go so well in this baked oatmeal recipe.

This dish was inspired by my Apple Cinnamon Baked Oatmeal.  It came out even better than I imagined it would.  These would be great for those breakfasts on the go.  They taste especially good warm and right out of the oven.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl
  3. Mix wet into another.
  4. Add wet to dry and spoon batter into greased muffin pans and bake in the oven for around 20 minutes.

I used jumbo muffin pans and filled them about halfway. I got about 6 single serving baked oatmeals out of my batch. You may want to double it if you would like more to stick in the freezer.

I was rummaging through the cabinet to see what I could use instead of the freeze dried strawberries (raisins? figs?) when lo and behold I found a snack size pouch of freeze dried bananas and strawberries I had picked up off the clearance rack at Walmart for $0.30. Wohoo! Yummy! Now for future times I make this I'm not sure what I'll use (freeze dried strawberries sound like they'll be expensive)... Kudos to it being egg free (unlike most muffins), due to an egg allergy in our house . And this was really simple! Most tedious part was just getting the coconut oil melted.
  2. in the oven now! Can't wait to taste them. I used frozen strawberries and since they were very juicy, I left the oil out. Fingers crossed, they turn out ok.
  3. Hi! This looks great. Is it one cup of freeze dried strawberries still dry or one cup reconstituted? Also, is a T a tablespoon? Thanks in advance!
    1. I just threw them in dried. You can also use fresh strawberries if you slice them thin. T = tablespoon tsp = teaspoon.

  5. What do you do to eat them when they've been frozen? Do you microwave them, Bake them, etc? Please let me know I would greatly appreciate it!
    1. I let them thaw on the counter and then I heat them in the oven if needed. You can also microwave them on 50% heat if you use a microwave.
  6. I've made these twice and love them! I used dried cranberries because I didn't have strawberries, and a little pumpkin spice:). I was wondering if you could leave them out on the counter in a container or if they should be refrigerated? We usually eat the batch within 24 hours, but wasn't sure because of the bananas. They taste better not cold in my opinion;). Thanks!
    1. So glad you like them! If you plan on eating them within 2 days, they should be okay on the counter. If you plan on keeping them longer, store them in the fridge. You can also freeze them for up to 6 months! :)
