Blueberry Oatmeal Waffles (Vegan)

Blueberry Oatmeal Waffles. So I got this waffle iron about a month ago.  My first few attempts at healthy waffles were epic fails.  Today I finally came out with a winning recipe!

These blueberry oatmeal waffles came out great!  My kids really enjoyed having these blueberry oatmeal waffles.  I hope you enjoy them too!

 

Blueberry Oatmeal Waffles

 

I got some organic blueberries from Sprouts yesterday and they were so good!  Blueberries are on the “dirty list, so I only buy them organic and in season.  I haven’t had them in months.  When I saw them sitting there, I had to snatch up a couple pints.

So glad I did because they were sweet and juicy!  We got some yummy strawberries too.  So good!  Waffles and pancakes are super easy to whip up fast.  I actually mix the dry ingredients the night before, so it takes just a minute or two to add the wet in the morning.

Blueberry Oatmeal Waffles

Blueberry Oatmeal Waffles

Prep Time 10 min Cook Time 10 min

Ingredients

  • 3/4 cup oat flour
  • 1/2 cup spelt flour
  • 1 1/2 cups milk (I used almond milk)
  • 1/2 cup rolled oats
  • 2 tsp baking powder
  • 1 T maple syrup
  • 2 T coconut oil
  • 1 egg (I used a flax egg replacer)
  • 1/3 cup shredded coconut
  • 3/4 cup blueberries (I used fresh)

Instructions

  1. Preheat the waffle iron.
  2. Mix all the dry ingredients together in one bowl.
  3. Mix wet in another.
  4. Add wet to dry and mix well.
  5. Fold in blueberries.
  6. Spray the waffle iron with oil before spooning batter on each time.
  7. I used a 1/2 cup measuring cup to scoop the batter onto the waffle iron.

Recipe Notes

I got 4 large waffles out of my batch. If you have leftovers, you can freeze them in a plastic container with parchment in between each waffle.

  3. I just made these waffles !! Super good ; I used so delicious coconut milk , I didn’t have spelt I replaced it with whole wheat flour. I love shredded coconut but in the waffles I don’t like the texture I will replace it maybe with chopped sliced almonds , I also added 1/2 ts almond extract . I will decreased to 1 table spoon of pure maple syrup . I don’t like too sweet and when you like maple syrup with your waffles it makes it sweet . But other than that these waffles rock ...super tasty next time I will use lemon zest with a little bit of lemon juice and use the 2 tables of maple syrup. Thank you
    1. Hi Brigitte! Glad you liked the taste. If the texture bothers you, I bet you can pulse the coconut in the food processor a few times to give it the same consistency as the flour. :)
