Chocolate Chip Cookie Dough Larabars.  Okay I am officially addicted to homemade larabars!  My first recipe was the Chocolate Brownie Larabar, then there was the Coconut Cream Larabar and now the Chocolate Chip Cookie Dough Larabar.

I have to say the coconut cream is still my favorite, but the cookie dough comes in at a close second.  You can roll them into balls as well if you don’t want to do bars.

These are just so easy to make and they contain just a few ingredients.  This was my second attempt for this flavor.  The first one came out good, but I didn’t think it was quite right.

Chocolate Chip Cookie Dough Larabars

Prep Time 15 min

Ingredients

Instructions

  1. Mix the cashews in the food processor until you get a fine powder.
  2. Then, add the all of the ingredients except the chips and pulse until a dough starts to form.
  3. Once everything is well mixed, line an 8X8 pan with parchment paper leaving enough room for some paper to stick out the sides.
  4. Working carefully, spoon the dough into the pan until it is spread out evenly.
  5. The dough will be very sticky and wetting the spatula a little helps move it around better.
  6. Once the batter is evenly spread, press down with the parchment or your spatula to pack it tight.
  7. Sprinkle the chips over the top and gently press them in. Place in the fridge to set for a few hours.
  8. When it’s ready, lift the whole thing out with the extra parchment paper and cut with a pizza cutter.

  1. I am new to Larabars. I buy them at Walmart. I would love to try these to save money, however, I'm not familiar with dates. Can I buy these dates at Walmart?
    1. I know you can get a big box of them at Sam's Club, so they are probably at Walmart as well. They would be in the same place as all the other dried fruit.
      1. Are medjool dates also dried? I have been trying to find them and I saw that you said they are near the other dried fruit. Thank you!

  6. I was very excited about this recipe! I made them tonight and they've been in the fridge for 6 hours and are still very soft...is this normal? I guess I imagined them stiffening a little like a bar.
    1. They are soft. The store bought larabars are pretty soft too. I think it's due to the dates. I hope you liked them at least. I'm sorry they didn't turn out how you expected. :(
  7. just tried out the recipe i doubled it with 4 cups pecans 24 dates 1/2 cup of water and a dash of honey :) waiting to see how these come out ! thank you for the recipe
  8. Ok - THESE ARE FABULOUS!!! I can't even say it enough. I love them and feel good about eating them. So happy I never bought one of these - though I have had cliff bars. Kiddos weren't too keen on it, they are so picky and could taste the nut in it and couldn't decide what to think. I will try the brownie one next time for them.

  11. Hi! I just made these and I'm a huge fan. Hoping my daughter will be as excited about them as I am. Question, though. Is it safe to assume that the nutritional info is about the same as a store-bought Larabar? I'd like to keep track as best as I can. Thanks!
    1. Glad you like them! Yes, I think the nutritional info should be pretty spot on since I used the same exact ingredients as they did.
  12. I made these last night and they are so delicious!!! I did have a little problem with them sweating out liquid as I added the chocolate chips in by hand, so I think I will leave the water out next time and just add it if I feel I need it. I solved the problem by kneading in some ground flax and oats- so they just turned into oatmeal chocolate ship cookie dough bars! Very yummy! Thanks!
  13. I just made these. They are wonderful! I added a little vanilla and rolled them into balls instead of bars. Next time I might try adding a tiny bit of molassaes. Thank you for your fantastic recipes.
    1. You can use another kind of date. You just might have to use a few extra since the medjool dates are the largest.
