Key Lime Larabars (Vegan and Gluten Free)

Key Lime Larabars.  I had a reader request a key lime larabar recipe.  I have got to say that I like these a lot.  I am not really a fan of key lime anything, but these little bars are good!

They reminded me of the Coconut Cream Larabars, which are like crack and also my favorite.  These larabars are so easy to make.  How can you not try them when they take only 5 minutes?

The taste of lime comes out real nice in the finish.  It’s a subtle taste.  I only used the juice of 1 lime, bit you can add more if you like.  Now I have one question.  Is there any flavor I am forgetting about?  I thought maybe the blueberry flavor.

Ingredients

Instructions

  1. Process the cashews, coconut and almonds until they are a fine powder. 
  2. Then add the dates and lime juice until a dough forms.  If the dough looks a bit dry, you can add a few tablespoons of water to help it come together. 
  3. Line an 8×8 baking dish with parchment leaving enough room for some to come out the sides.
  4. Spread dough into the the dish.  It will be very stick and you may need to wet a spatula to help you. 
  5. Once the dough is evenly spread, press it down with your palms using the parchment paper. 
  6. Place in the fridge for a few hours to set.

  4. About how much lime juice do you get out of a lime? I have the stuff in a bottle and would like to give this a try.
  5. Im really excited to try all the larabar flavours. I cant find the medjool dates anywhere. Is it ok to use another variety of dates? What would the approximate measurment of 12 medjool dates be?
    1. You can use the other dates, but you will need more since the medjool dates are larger. Maybe 15-20? Just guessing. My mother in law gets the medjool dates at Sams Club. I get mine at Whole Foods in the bulk bin. You can buy them on Amazon too.

  9. Random question. We live key lime flavored greek yogurt but I hate the added sugar. Do you think I could add lime juice to plain greek yogurt or would it curdle?
    1. Not sure. If you are going to eat it right away, it may be okay. I make my honey mustard dressing with yogurt and lemon juice and it doesn't curdle.
  10. Hi Melissa, I FINALLY made these Key Lime bars today and they are in my refrigerator as I type. I used 8 Key Limes as I have them locally available in my area because I REALLY wanted to taste lime. One lime wasn't enough and definitely omit the water IF you use more limes. I couldn't find unsweetened coconut so with the dates and the coconut, mine are probably sweeter than yours, but we love them. ( I tasted the dough before refrigerating and they are not going to last long, I just know it....LOL ) To answer the above comment, YES, you CAN freeze them and they hold up very well. I had no idea there were so many varieties of these bars. The Cherry one sounds yummy, too. I don't cut my bars into big pieces. Instead, I cut them into small, very small, squares....less than an inch square. They last longer in my family of 6.
  11. I love anything lime and made these recently. SOOOO good. A lot of protein and no refined sugar. I used the juice of two medium limes and it was tart and sweet which I love. I just love the protein content and how I can take this with me without the need for refrigeration. I usually eat raw almonds but for this I did buy unsalted roasted almond and cashews and did not use coconut since I didn't have it. It is a sticky dough and once out of the fridge for an hour or so, it does get sticky again so like the recipe suggested, I cut mine into bars and wrapped them in wax paper. Thank you for a great, no bake recipe. Awesome nutrional value.
  12. Loving all these recipes but I need nut free for school lunch boxes. I substitute with pumpkin kernels and sunflower seeds but would be grateful for any tried and true nut-free recipes?
    1. If you ask me about specific recipes, I would be happy to give you a nut free alternative. I use nuts in the larabar recipes because that is what they call for. You can probably sub out sunflower seeds and rolled oats in this recipe to make it nut free. Rice cereal might also work.
  13. Hey love these! Though how long do you think they would last out of the fridge? I ask just because I don't have a fridge to myself....dried fruit and nuts are okay as long as stored well, but does adding in juice and other bits affect the storage, and how long they last?
    1. I am not sure. I am thinking probably not too long out of the fridge. Maybe a couple days? You can freeze them as well.
  14. Is there a possibility of a Larabar in the flavor of the caramel/coconut/chocolate Girl Scout Cookies? It almost seems wrong to ask a healthy bar to taste like something so sinfully rich!
