Carrot Cake Larabar Bites (Vegan)

Carrot Cake Larabar Bites.  I know that you all love larabars.  I have had several requests for the carrot cake bar recipe, so I thought I would create you these carrot cake larabar bites.

The flavor of these carrot cake larabar bites of reminded me of my Coconut Cream Larabars and also my No Bake Pumpkin Pie Cookies.

I checked the ingredient list on Larabar’s website and created my recipe based on those ingredients.   I am hoping it tastes similar to the store bought version.

I am not a huge carrot cake fan, but my husband is.  My baby daughter LOVED this recipe.  That was a surprise to me.  Very kid friendly. 🙂  They are also vegan, gluten free and grain free.

Carrot Cake Larabar Bites

Prep Time 10 min Serves 12 balls     adjust servings

Ingredients

Instructions

  1. In the food processor , mix the carrots, walnuts and almonds and coconut.
  2. Then add in the cinnamon, salt, dates, pineapple and coconut oil. If the mixture seems slightly dry, add in a bit of water. I didn’t have to add any in mine.
  3. Once a dough forms, roll into balls and place in the fridge to firm up.

I got about 12 balls out of my batch and I ended up flattening them into cookies. Enjoy!

  1. I just made these this afternoon. Wow!! I've never had a "real" Larabar so can't compare them, but there is no need to buy them when they are this easy to make!
    1. Awesome! Glad you liked them! I had never even had the store bought version either. I just know they are really popular and very easy to make yourself. I think the store bought bars go for $1.50 bar.
    1. I don't see why not. I only added it because Larabar's original recipe calls for it. I think it would be just as good without though.
  2. I did the same thing as you, Melissa! ...started with the Larabar ingredients to form my recipe :) I haven't made these in a while though, and I happen to love carrot cake! Mine keep turning out really greasy and I am following your recipes except using delget dates in place of the medjool. Are yours greasy? Don't get me wrong, we love them and it's not really a problem, but from the pictures yours don't look greasy at all
  5. I was in Target the other days & was soo hungry but didn't want to give in to the cookies I was craving so badly! Went down the health food aisle & saw different kinds of "natural", sugar free & healthy protein & snack bars. Read label after label & finally decided on the Blueberry Muffin Larabar. I had never even heard of Larabar before. After I read the ingredients & bought it & then ate it.. I thought, "gee, this can't be THAT hard to make", so I, like u, decided to try & make my own!! I haven't MADE them yet ( think I'll start w/peanut butter one first as that's my hubby's & my favorite flavor of any kind of cookie or candy), & see how THAT turns out b4 I get carried away & make any others! I really can't wait to make them & in fact, have planned to make them tomorrow! Will let u know how they turn out! Thanks SO MUCH for ALL ur great looking HEALTHY recipes!!!
  6. These look incredibly delicious, but I simply do not like coconut so I am hesitant to make them for that reason. Any idea on if there a substitute that I can use instead? Thanks!
    1. You might be able to omit it. I only added it because the store bought larabars have coconut in them.
    1. Yes refrigerate them. They should last a couple weeks in the fridge and you can also freeze them for longer storage. :)
  7. Hi, there. I really like your blog. After having my 5 year old in school for a few weeks, I think I am going to take him off the school meals (they suck!) and switch him to more of a whole foods diet. You have a lot of really good recipes that he might like. My son has sensory issues from his surgery as a baby, and he's a very picky eater. Thanks for sharing your story about your daughters, btw. I did want to let you know though, that it is illegal for you to use the name Larabar in your recipe, since it would be copyright infringement. Just thought you should know. I'm excited to try some of your recipes!
    1. Thanks for the compliments on the blog. It's only illegal if I use the name with intent to sell a product. I am not the first person to use the name in my recipes.
