Cinnamon Roll Overnight Oats.  I have a new recipe for you.  Cinnamon roll vegan overnight oats.  Have you made overnight oats yet?

They are also often referred to as oats in a jar.  Basically, you just throw everything in a jar and refrigerate overnight.

What you end up with is a delicious oatmeal in the morning that requires no cooking!  I have been eating overnight oats for months now.

They are also very popular on my blog.  My favorite overnight oats recipe so far has been the Almond Butter Overnight Oats, but this cinnamon roll overnight oats recipe may be a close second.

It’s like the taste of a cinnamon roll in your morning oatmeal.  I like to store mine in mason jars.  They are perfect.

Instructions

  1. In a food processor or blender , grind up the cashews until they are smooth.
  2. Combine all the ingredients, including the cashews, in a jar and mix well.
  3. Cover jar and set it in the fridge for the night.

Recipe Notes

You can eat the oatmeal cold, or heat it up right before eating. I eat mine cold. I make 5 at a time for easy breakfasts all week. If you use steel cut oats, they will still have a crunch. If you use rolled oats, they will be much softer.

This recipe calls for a lot of cinnamon because I love it. If you don't like as much of a cinnamon flavor, you can use less.

  1. I've been looking forward to trying one of your overnight oats recipe- and I think this is the one that's going to make me finally do it! My question, what happens if I don't soak the cashews? I can see myself forgetting, then not having enough time for them to soak and still get into the refrigerator.
    1. If you don't soak the cashews, they will not get as soft and when you grind them it might be slightly gritty. I added the cashews to give the oats a creamy type taste. Almost like the filling on a cinnamon roll.

  4. Well, I didn't have cashews, so I just made two of the Almond Butter Overnight Oats. Those are so delicious, I make them almost more than the Banana Nut overnight oats. Now, I think the almond butter ones are my favorite!! As soon as I get to the store I will get the cashew and give this one a try. Looking forward to the new recipe!! These are so great to have in the fridge for breakfast!! Can't thank you enough for these recipes! They are my main breakfast anymore!!
  5. Oats in a jar, and overnight oats are 2 different things. You can make overnight oats in a bowl or anything. Oats in a jar are designed so you can scrape up the remainders of what's left in the jar, e.g getting the lats remnants of nut butter from a nut butter jar- so you save the best for last.

  9. I'm not a big fan of overnight oats (they taste great but I can't get over the texture) but I LOVE all of your baked oatmeal recipes. I have tried them all and am looking for a new "flavor". Can any of your overnight oats easily be baked instead? I'm afraid to attempt it without asking your opinion first. :)
    1. I'm not sure if they can. You can probably do some kind of baked variation though. You may need to slightly adjust the ingredients. Maybe less milk and something to help bind them? If you try, I would love to know how they come out! I bet the cinnamon roll one would be good baked with the cashew cream spread on top. Yummy!

    1. You can, but soaking the cashews first makes the cashew butter softer. Almost like a cream. I think it will still be good with cashew butter though.
      1. That's good to know that when cashews are soaked, it becomes creamier. I'll make my first batch with cashew butter and the second with soaked cashews. You'll be the first to know how they both comes out (:
  11. I don't have cashews, only cashew butter. Could I use cashew butter instead? And if so, how much would I use of the cashew butter in substitute for the 1/4 cup cashews? Thanks in advance!
    1. You can use cashew butter, but the taste will be slightly different since soaking the cashews makes them extra soft. Almost like a cream. If you were to use cashew butter, I would use 1 tablespoon.

  13. Hello! The recipe calls for gluten free rolled oats or rolled oats - is this the same as instant rolled oats or steel cut oats?
    1. Yes. Either rolled oats or steel cut oats will work. However, steel cut oats will still retain a slight crunch so if you like a smoother oatmeal, go with the rolled oats. Instant oats are different. They will probably get too mushy.
