Crock Pot Spaghetti & Vegetables.  I have been trying to come up with more crock pot recipes lately.  This crock pot spaghetti recipe was actually my husband’s idea.

I love this crock pot recipe because it is a one pot meal making cleanup a snap.  Not to mention it’s super easy!  Slow cooking this allows for more of the flavors to develop as well.

This is an inexpensive meal that is very filling and makes a a lot.  I kept mine gluten free by using brown rice spaghetti, but you can use any pasta you like.

UPDATE: After some feedback, I have altered this recipe a bit.  It now calls to add the spaghetti when there is only 20 minutes left in the cooking process.

Crock Pot Spaghetti & Vegetables

Prep Time 10 min Cook Time PT1 H30M Serves 5 servings     adjust servings

A super easy one pot meal!

Ingredients

  • 1/2 package pasta (I used brown rice spaghetti)
  • 2 cups water
  • 1 green pepper chopped
  • 1/2 an onion diced
  • 2 cloves garlic minced
  • 1 red pepper chopped
  • 5-7 mushrooms sliced
  • 3 cups diced tomatoes or 1 28oz can diced tomatoes
  • 2 T fresh basil chopped
  • 2 T fresh parsley chopped
  • sea salt to taste

Instructions

  1. Put everything except the basil and parsley and pasta in the slow cooker and cook on low for about 1/2 an hour.
  2. Then turn to high for another 1 1/2 hours or until the onions start to soften.
  3. Add in the pasta when there is about 20 minutes of cooking time left.
  4. Add the basil and parsley about 5 minutes before the spaghetti is done.

Recipe Notes

If the sauce seems a little thin to you, you can add some arrowroot or non GMO cornstarch to thicken it up. This meal should keep in the fridge for a week.

  2. I have not tried this recipe yet and I am seeing that several people are having issues with the noodles. Would it possibly be a good idea to cook the noodles on the stove and then mix them in with the crock pot ingredients right before serving?
  3. Finding your website inspired me to try to attempt whole food for our entire family. This was the second recipe I made from your site, and it came out inedible :-/ It looks just like your picture, though! I used brown rice noodles and they were gummy. I let them cook a bit longer but that didn't make it any better. And some of the peppers were crunchy, and yet I cut my peppers smaller than what showed in your photo. Curious. I followed the recipe to a "T" and added the noodles with 20 minutes left. I think I might be willing to try this again, and cook the noodles separately, but it was so much chopping, it was disappointing to have to scramble for something different for dinner. It did smell wonderful, though!
    1. I am so sorry Bree! :( This recipe seems to be a hit with some and a fail with others. I am tempted to take it down. I feel terrible for this. :(
  4. I made it without the water and pasta and cooked the pasta separately. I added some spinach and oregano and used half crushed tomatoes and half diced tomatoes. It was good. I used Costco's black bean pasta and had no idea how much half a box would be so just cooked it separately.
  5. just made this for dinner and I'm a little disappointed. I used tortellini, which I cooked separately but otherwise followed the recipe to a "T"...but this was so tasteless and watery.
  6. Don't take your recipe down! I think it's a fabulous starter recipe. I noticed it doesn't call f or salt or pepper, nor any fats/oils. I'll probably add some olive oil and cook my pasta separate, but I never would have thought to throw all these veggies in a crock pot to serve over pasta! I'm feeling kinda silly for not thinking of it, to be honest! Thank you for posting! I'll let you know my results when I make it, which might be awhile, but I won't forget to let you know!
  7. Hi Melissa! Thank you so much for posting the recipe - please don't take it down! I very much enjoyed the flavor, but probably will try to add the cornstarch next time to thicken the sauce. Do you have a recommendation for how much cornstarch would work for this recipe? I am generally new to cooking with the crocpot so any advice would be great. Thanks again for the delicious post!   8. I buy my pasta in a 20 lb. box. I used 1/2 a package as you said. What a disaster!!. Maybe when writing recipes you could use universal terms like grams or ounces or pasta.
