Coconut Vanilla Granola (Vegan and Gluten Free)

Coconut Vanilla Granola.  I have to admit, I am more of a vanilla girl than a chocolate girl.  You could probably already tell that from my coconut vanilla overnight oats and my coconut vanilla chia pudding.   I couldn’t get enough of this coconut granola.

It was so good!  My picky 4 year old ate this up fast!

I have to admit, this recipe was actually supposed to be granola bars, but when I went to cut them, they crumbled.  Same thing happened with my Blueberry Cashew Trail Mix.

Since the taste was amazing, I decided to share the recipe as granola.  This homemade granola is bursting with vanilla and coconut.

I just love those ground vanilla beans. They make everything so yummy!  If you haven’t tried them, I highly recommend it.

Coconut Vanilla Granola

Prep Time 10 min Cook Time 30 min Serves 4 servings     adjust servings

Bursting with coconut and vanilla flavors!

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in a bowl.
  3. Mix wet in another.
  4. Add wet to dry and mix until combined. I did this by hand.
  5. Spread mixture onto a lined baking sheet.
  6. Bake for 15 minutes, then shake the granola on the tray and bake for another 10-15 minutes.

Store in an airtight container for 7-10 days. You can refrigerate it for longer. Enjoy!

  4. This looks delicious! Do you use homemade dried cranberries or have a certain brand you recommend? That's the only ingredient I don't have!
    1. Thank you! I used dried cranberries I bought from Natural Grocers. You could always sub another dried fruit if you like.

  6. This is delicious! I have been unable to find vanilla bean, since its no longer available on amazon. I realized in the middle I was out of maple syrup and dried cranberries so I subbed honey and just left it plain. I was all set to add chocolate chips but it tasted so good without when I opened it to shake the pan in the middle that I left it out.
    1. And my ridiculously picky kids who after 4 or so months of "real food" still whine for snacks from a box, love it! Just be careful I burnt it a bit, wondering if the honey cooked faster than maple syrup would have.

  8. Hi! I made this yesterday and it was very delicious! My only thing was that I found 30 minutes to be too long - it has a sliiiightly burnt taste to it. 25 minutes will be perfect for next time! Thank you for sharing :) Amber
    1. Glad you liked it! Everyone's oven runs a little different. Maybe I will add a range instead of an exact time. :)

  10. I made this last week and just about to make another batch. I ran out of flax meal and replaced with almond meal. Yum yum. My husband said this is the best granola recipe. He sits with the jar and just eats as is. Another winning recipe Melissa!!!!. Francesca :))
  11. Loved this recipe!!! Easy enough that the kids could help. Whole family loved this granola. I had to make a second batch the next day.
    1. You might be able to reduce it to 1/4 cup? If the mixture looks dry, you can add some applesauce in it's place
  12. I am a skincare & soapmaker product maker. Although I do huge cooks a few times a year to fill my starving students freezer as well as my own, I don't usually make desserts, snacks ect unless I'm taking them to share. At my house, I'll eat a few and throw the rest out to avoid eating too much. I was in the middle of making a list of soapmaking ingredients I need when I can across your blog. So I had to start a separate list! My all time favorite granola is from whole food mkt and its cherry vanilla so I will (must!) use driend cherries instead of cranberries and it already calls for vanilla so whoo hoo... I rarely buy it at the mkt due to cost and have never attempted to make it so super stoked!! Thanks for the inspiration!!
