Lemony Coconut Fudge.  Coconut and lemon go so well together, don’t they?  I am a big fan of the combo if you haven’t noticed already.

I have some coconut lemon crumb bars and lemon tarts already on my blog.  This lemon coconut fudge makes a wonderful addition.

This lemony coconut vegan fudge couldn’t be easier to make.  Plus, it just melts in your mouth.  Hard to make it look sexy in a photo, but I promise if you try it, you will love it!

This coconut lemon fudge is also vegan, gluten free and paleo approved.  There is only 2-3 tablespoons of sweetener in the whole batch!

Prep Time 5 min Serves 5 pieces of fudge     adjust servings

Only 3 ingredients are needed to make this delicious and healthy fudge!

Instructions

  1. Combine all the ingredients in a food processor .
  2. Spoon mixture into lined muffin cups . I used standard sized muffin cups.
  3. Stick in the fridge to set. Should take an hour.
  4. These should keep for a couple weeks in the fridge. You can also freeze them for longer. Enjoy!

      1. no. they are totally different. coconut butter is the pulp it self. coconut cream is the creamy deliciousness that separates to the top of the milk when you open an unshaken can of coconut milk.both are decadent and fantastic!!

  2. I made these today - so easy and SOOOO good! I made it from shredded coconut. I blended the coconut for about 15-20 min., then added the remaining ingredients. Blended for another couple of minutes and voila! Thanks a lot for this recipe!!!

  4. 1 cup of coconut butter has around 1800 calories! WOW! But- that did not deter me from making these delicious cups of sunshine! What a great combination of sweet and tart.. I used honey instead of maple syrup and it all came together nicely in Vitamix. Will definitely have to refrain myself from eating all of them in a day. Thanks again Melissa for a great recipe!
