Smoky Sweet Potatoes and Avocado with Cauliflower Rice

I have been wanting to try out cauliflower rice for a long time.  For some reason, I thought it would be hard to make.  Boy was I wrong!  Making cauliflower rice is super easy. I first learned how to make it from Tasty Yummies.  She has a step by step tutorial.  This smoky sweet potatoes and avocado with rice is delicious and very filling for a grain free dish!  I have been venturing into grain free meals lately.  I already have a zucchini pasta with avocado pesto and a spaghetti squash with pesto on the blog.  I will be making this recipe again in the near future!

Sweet Potato, Avocado and Cauliflower Rice - My Whole Food Life

I cooked the rice and the sweet potatoes the day before.  So the following day I only had to quickly throw them together.  Cauliflower rice has the same mouth feel as rice.  I was really surprised how good it was!  You have to try it.

Smoky Sweet Potatoes and Avocado with Cauliflower Rice

Prep Time 45 min Serves 4 servings     adjust servings

Ingredients

Instructions

    For the potatoes:

    1. Preheat oven to 375.
    2. In a large bowl, combine the sweet potato, oil, smoked paprika, and chili powder. Toss every thing together to ensure the spices are mixed through the potato.
    3. Transfer potatoes to a lined baking sheet.
    4. Bake for 25-30, or until you can easily push a fork through the potatoes.
    5. Set aside.

    For the rice:

    1. Cut the cauliflower into florets. Throw 1/2 of the cauliflower into a food processor . Pulse until you get a crumb-like consistency. Do mix too much or it will turn to mush.
    2. Transfer the processed cauliflower into a saucepan with a couple teaspoons of oil. Saute for about 5-7 minutes. Set aside. Repeat the same steps with the other half of the cauliflower.

    Throwing it all together:

    1. In a large saute pan, add the onions with a little oil. Saute them on medium heat until they soften. About 5 minutes.
    2. Add the cauliflower rice, sweet potatoes, pepitas and some salt and continue to saute for another 5 minutes or so.
    3. Transfer the mixture to a bowl and serve with sliced avocados on top. Enjoy!

    This recipe seems pretty involved, but it's not if you cook the potatoes and rice ahead of time. Only add the avocado right before you are going to eat it. Otherwise it will brown. This should last a week in the fridge.

    1. This looks so delicious! I've never tried cauliflower rice before nor have I ever even thought about making it into rice. I have made mashed "potatoes" though from cauliflower! It's crazy how versatile it is so I bet it would be delicious in this dish :)

    4. Hi!! I have never used or even seen pepitas..besides Amazon, do they sell them in regular grocery stores or like a whole foods? Also do u chop them up or sautee them whole? Sorry new to this:)
      1. You can find pepitas at Whole Foods for sure. Probably in the bulk section. I throw them in whole. They are small, like sunflower seeds.
    5. Would this work if I were to just skip the saute step and try the cauliflower raw? I've been trying to up the percentage of raw foods in my day lately though haven't tried raw potatoes yet and can't wait to try smoky spices on the yams. And thanks for sharing!! I love your recipes!

    7. Wondering if this is eaten hot or cold when you make the sw pot and the rice beforehand? If made in advance, would you take the cold ingreds from the fridge and add them to the large saute pan to warm everything up?
      1. You can do that. I made the cauliflower rice and potatoes the day before, then quickly heated them up in the saucepan the next day.
    8. Made this last night for the first time. Oh my yum! Never had cauliflower rice before this either. Amazing! My husband nor the two teenagers are on board with the healthier eating as of yet, so I don't usually tell them exactly what we're eating. They didn't see the initial prep of the cauliflower, so I told them we were having " Smokey Sweet Potato and Avocado Stir Fry ". Hehe! They never questioned it. I thought they might since the cauliflower mash was a flop with them. Hubby was even trying to think of other things to try in the " brown rice "...lol! I did confess to him after the fact but not to the teenagers. I added a sprinkle of cayenne to mine as well which was delish! Thanks, Melissa!
    9. Melissa, this was FANTASTIC! This is the first time that our family has had cauliflower rice (loved it!). The big thing about the "rice" was that I cooked it until it didn't smell like cauliflower anymore (not sure if that's the plan, but that's what I did--tasted great!). I questioned adding so much smoked paprika but stuck to the recipe. Glad I did! Yum-o! My daughter who "hates" sweet potato ate this without any question! We'll definitely have it again and again.     10. Tried this last night and it was husband AND 3 year old approved! We're newbies to whole foods and clean eating, so I was a little nervous :D I will definitely be making this again and especially using the cauliflower rice as a base to some other recipes (this was our first time having it). I also scrambled up an few eggs and cooked those while I was finishing up sauteing the onions.
