Lemon Coconut Ice Cream

I have been loving homemade ice cream lately. It’s getting close to the 100’s here in Dallas, so I like to be able to enjoy a frozen treat.  This lemon coconut ice cream is my latest ice cream recipe.  I just love all things lemon and coconut, so I knew this lemon coconut ice cream would be delicious.  And it was!

This very ice cream recipe only contains 4 ingredients!  This lemon coconut ice cream is vegan, gluten free, dairy free and paleo.   It only takes about 20 minutes to make.  If you don’t have an ice cream maker, you can make this recipe into popsicles instead.  I like these molds.

Lemon Coconut Ice Cream

Prep Time 1 min Serves 4 servings     adjust servings

Ingredients

Instructions

  1. In a blender, mix all the ingredients for about 1 minute.
  2. Pour into your ice cream machine and turn on.
  3. It should take about 20 minutes to reach a soft serve consistency.
  4. If you like a harder ice cream, stick the ice cream in the fridge for about an hour.
  5. I like to store my ice cream in this tub .

    1. You and I may know it's vegan, but many people don't realize vegan means dairy free. Trust me. I have had questions before.
  2. I love your ice cream recipes and have made several. I'm making this one right now and I'm finally getting around to asking this question that is on my mind every time I make one: I have a Cuisinart ice cream maker - is it normal for a layer of the ice cream to freeze onto the side/bottom of the bowl while it's going? Should I be scraping it down periodically and if so, what do you recommend using? A rubber spatula isn't strong enough but I don't want to scrape the bowl with a metal spoon.
    1. I sometimes notice a very thin layer of frost on the side of the bowl. You can try scraping down the sides more as it's running to prevent that. Maybe use a silicone spatula? You can run it under warm water so it can scrape the frost better?
  3. Cooking for GF, Egg Free, Dairy Free, Soy Free, a diabetic, and "I eat everything" people... Everyone LOVED this ice cream--especially the kids!
  4. So just mixed the ingredients together and tried it (before turning into ice cream) and I'm a little worried lol I bought unsweetened coconut milk is there anything else I could add to make it a bit sweeter?
