Healthy Flourless Chocolate Muffins

Oh wow!  These healthy flourless chocolate muffins are seriously good!  They are also super easy to make.  All you need is 4 ingredients!

These chocolate muffins are very rich, and would probably be great for cupcakes as well.  These healthy flourless chocolate muffins only take about 20 minutes from start to finish.  No mixer required.  We all need more chocolate muffins in our life right?

I used peanut butter in these chocolate muffins to add a rich texture.  You could also use sunflower butter if you have a peanut allergy.  If you want the rich texture, but not the strong flavor of the peanut butter, you can try using macadamia butter or cashew butter.

Macadamia butter works awesome in my fudgy flourless brownies, so I know it would be good in these as well.  I also often use cashew butter as a base for my flourless cookie recipes.  These healthy chocolate muffins are vegan, gluten free and grain free.  I hope you enjoy them.

Prep Time 5 min Cook Time 15 min Serves 8 muffins     adjust servings

Only 4 ingredients to make this delicious chocolate treat!

  1. Pre-heat oven to 350.
  2. In a food processor combine all ingredients. You may have to stop and scrape down the sides a few times.
  3. Once everything is mixed well, spoon batter into lined muffin cups. I used silicone molds. The batter will be VERY sticky. I found wetting a spoon kept it from sticking.
  4. I topped a few of mine with chocolate chips. Feel free to do the same.
  5. Place muffin pan in the oven and bake for about 15 minutes.
  6. Wait until these are completely cooled before removing from the pan.

Store these muffins in the fridge. They should last at least 5 days. You can also freeze them for longer storage. Enjoy!

  1. I made these this evening using coconut butter, rather than peanut butter (don't like the stuff). I ended up baking them longer than suggested (24+ minutes), and the centers still came out fudgey, as mentioned by some others. I think I might try again and add some coconut flour or maybe make mini muffins instead of regular-sized muffins, to help them cook through a bit more. The flavor is excellent, so rich! Looks like you're on Pinterest and letting people pin your recipes gives you more exposure. From a marketing perspective, of which I have my degree in, it made no sense to me. Why would you not allow people to pin your recipes and gain a potentially greater following for people looking for these kinds of recipes?

  9. I did the math on these because i am currently counting calories and i came up with 253 calories per muffin. BTW, these sounds wonderful and I am going to make this this weekend. And I didnt include chocolate chips in the calorie count.
    1. Thanks for sharing. You can always make them bite sized for less of a calorie load. I personally don't count calories myself, but I know many people do.
  10. I just made these. They are SO good, and even better the next day after refrigeration! Thanks for posting this recipe. It would be helpful to include how to know when they are done. Knife/toothpick test? Are they supposed to be a little fudgy in the middle still or is it a clean toothpick type of thing? I had to bake mine for over 20 minutes before they seemed even close to done. My oven doesn't normally take longer than recipes say. Sorry about all of the Pinterest trouble, but like at least one other person said, at least it reminded me of this recipe!

I don't think the tooth pick test would work for this recipe because they are so fudgey in texture. Glad you liked them. :)
  11. I made these muffins today - I am on a dairy/soy free diet for my breastfed daughter that has a Cow's Milk Protein Allergy. This recipe reminds me of a brownie recipe I tried. I baked these muffins for 20 minutes. The toothpick test worked for me - it came out clean. I also sprinkled my muffins with a few dairy/soy free chocolate chips. I am eager to try them once they have been refrigerated. I actually liked the brownie recipe better once they were refrigerated. I'm sure these will be the same!

  13. These look delicious!! But I'm allergic to all nuts. I was wondering if I could use Greek yogurt instead? It's a similar consistency.
