Raspberry Macaroons (Vegan and Gluten Free)

Raspberry Macaroons that are vegan and gluten free.  I am loving all the spring produce!  I picked up some raspberries to make these Raspberry Vegan Macaroons for you guys.

They are super easy to make.  Just a handful of ingredients and no cooking required!  I think this might work with other berries as well.

Raspberry Macaroons - My Whole Food Life

 

These take about 5 minutes to whip up.  Then you just need to let them chill in the fridge.  This recipe is also nut free for those that have kids with nut allergies.

I added chocolate chips to mine, but you can omit those if you like.  I just love the flavor combo of raspberry and chocolate.

Raspberry Macaroons

Prep Time 5 min Serves 12 macaroons     adjust servings

Just a handful of ingredients and no cooking required!

  1. In a food processor , combine all the ingredients except the chocolate chips. Once everything is mixed well, add the chocolate chips and pulse a few times to mix them up.
  2. Use a cookie scoop to form balls and place them onto a lined baking sheet . Stick in the fridge to chill. About 30 minutes.
  3. These should last at least a week in the fridge. You can also freeze them for much longer. Enjoy!

  2. These have coconut butter but the 4 ingredient macaroons have coconut oil. Why the difference? Can I use either one in either of the recipes?
  3. Oh, I love this! I had a similar recipe but it called for freeze-dried raspberries which are STUPID-expensive, this is far more reasonable, esp if I pick up the raspberries at Costco! :)

  7. Can you suggest a substitute for the sugar. I don't use it. No sweetener at all of any kind but I want to make these!!
  8. I'm having a problem with them not firming up? Are they supposed to be mushy? .....I've now put them in the freezer and that done the trick but can't figure out where it went wrong
    1. They should get quite firm in the fridge. Sorry they are not doing that for you. The freezer should firm them up as well.
