Homemade Healthier Tagalongs

Ever since I started eating clean and vegan, girl scout cookies were off my list of things to eat.  Well now I don’t have to say that anymore.  I made you some Homemade Healthier Tagalongs!  They are very easy to make and only require 5 ingredients.  If you like girl scout cookies, you may also like my Homemade Vegan Samoas.

These are gluten free, vegan and grain free.  They could even be paleo approved if you make them with almond butter instead of peanut butter.

I make my own cashew butter.  Here is a quick video on how to make it.

Homemade Healthier Tagalongs

Prep Time 15 min Cook Time 10 min Serves 12 cookies     adjust servings

A healthier version of the girl scout cookie!

Ingredients

Instructions

  1. Preheat oven to 350.
  2. In a food processor , combine the cashew butter, maple syrup and sea salt.
  3. Using a cookie scoop to form cookies and place them on a lined baking sheet . Use your palm to press them flat. Bake for 10 minutes and let cool completely.
  4. Once the cookies are cool, spread a dollop of peanut butter onto the tops of each cookie. Place the cookies in the fridge while you make the chocolate coating.
  5. Use a double boiler method to melt the chocolate and milk together. Once all the chocolate is melted, spoon a little on top of each cookie. Set in the fridge for 30 minutes for the chocolate to set.

  2. These were so yummy! My chocolate didn't really get runny so I ended up having to spread it on and they turned out pretty ugly... But still delicious! I will also be making the cashew butter base on its own because WOW it is tasty! Thanks!
  3. Is there something unique that the cashew butter adds? Why not all peanut butter? I'm just curious because I haven't used cashew butter much.
    1. Cashew butter creates a buttery texture. You can do all peanut if you like, but I think cashew butter better mimics the taste of shortbread in the real cookies. :)
