I don’t know about you, but I just love the warm weather and all the seasonal produce it brings along with it.  Healthy, fresh food does not need to be bland. I eat healthy and can tell you that you don’t have to sacrifice flavor or eat boring.

This Southwestern Avocado Toast is no exception. For this recipe, I chose to use  eureka! organic bread which bursts with rich flavor and tasty goodness! It pairs so well with the fresh tomatoes, onions, cilantro and avocado. Put it all together and you have yourself a very delicious and flavorful meal!

 

Southwestern Avocado Toast - My Whole Food Life

I used the Sweet Baby Grains variety for this recipe. My daughter Meadow loves seedy bread and asked for toast and jelly that morning using the Top Seed bread. They have six total varieties so the Grainiac, Seeds the Day, Saaa-Wheat, or Smoooooth Wheat varieties can satisfy your cravings too.

All the varieties are certified vegan and USDA organic. Plus, they contain no artificial flavors, colors, preservatives, or high fructose corn syrup. They even use sustainable packaging. All this adds up to a bread you can feel good about feeding to your family.

Southwestern Avocado Toast

Prep Time 10 min Serves 4     adjust servings

An easy and healthy breakfast recipe using fresh ingredients.

Ingredients

  • 3 tomatoes, diced
  • 1/2 cup diced red onion
  • 1 T chopped cilantro
  • 1 clove garlic, minced
  • Juice from 1 lime
  • Sea salt to taste
  • 2 large avocadoes, mashed
  • 4 slices eureka! Sweet Baby Grains

Instructions

  1. Mix all ingredients, except the avocado and bread, in a bowl.
  2. Toast the bread.
  3. Spread some pureed avocado onto each slice of toast.
  4. Add the salsa mixture on top of each slice.
  5. Serve immediately for best results. Enjoy!

  1. I recently started added a little salsa verde on top of my avocado toast and wow = next level! I like this idea to add fresh salsa ingredients - so easy for breakfast or lunch in the summer when I don't want salad :) Plus, it's so nice to see that there are more bread brands out there that are super healthy and real.
  2. Just made this and it was amazing! I added diced green, red and orange peppers and extra lime and cilantro because I love those flavors together. I finally found a breakfast I enjoy. Thanks Melissa!!
