Chocolate Almond Butter Ice Cream

It’s perfect weather for ice cream here in Dallas.  So I am busy making new flavors like this Chocolate Almond Butter Ice Cream.  Or rather, “nice cream.”  I call it nice cream because it’s made with frozen bananas.  That makes it very healthy too!

Now, don’t get scared off by the phrase, healthy ice cream. I promise it’s really delicious!  My 6 year old actually begs for this almost every afternoon in the summer. The best part about this?  You don’t even need an ice cream maker to make this! Yay!

I didn’t blend mine super well because I liked the bananas kind of chunky, but you are more than welcome to blend until smooth.  You can also make this with sunflower butter instead of almond butter for a nut free option.

When I go to the store, I always buy two bunches of bananas so I can put one bunch in the freezer.  That way I always have bananas on hand to make this.

2 Ingredient Almond Butter Cookies

The other day, I attempted to make a caramel almond butter, but had some difficulty with my blender.  So I turned the recipe into these 2 Ingredient Almond Butter Cookies.  They are delish!

This healthy cookie recipe contains ZERO added sugar.  They are even healthy enough for breakfast.  Yay!

2 Ingredient Almond Butter Cookies

This recipe happened by accident.  I was trying to make a caramel almond butter, but the whole mixture seized in the blender.  So I decided to change it up and make these no bake cookies instead.  I think they came out great.

If you love dates stuffed with almond butter, then this recipe is right up your alley.  It’s vegan, gluten free, grain free AND paleo.  I used salted almond butter in my recipe.  If you use unsalted, you may want to add some sea salt to the recipe.  I love the sweet and salty combo.

Chocolate Almond Butter Mousse Pie

Calling all nut butter lovers!  This Chocolate Almond Butter Mousse Pie is a must try! It starts with a date-sweetened almond pecan crust.  Then it’s filled with a luxurious almond butter chocolate mousse.  This pie may have a few steps to make it, but it’s completely no-bake and very simple despite the long instruction list.  It’s worth every minute.

This pie kind of reminded me of my chocolate mousse pie.  It’s also similar to my chocolate pumpkin mousse pie.  You really can’t go wrong when you are talking about any chocolate mousse!

This rich and creamy pie is no-bake, vegan, gluten free AND paleo approved!  So it’s basically for everyone and needs to be a staple at your holiday dessert party.  Trust me! I hope you enjoy it as much as we did!

If you need a nut-free version, you can make the crust out of sunflower and pumpkin seeds and then use sunflower butter in the filling.  Another great idea would be to sprinkle some coarse ground sea salt on top.  Yum!  I will be trying that next time for sure!

4 Ingredient Banana Coconut Cookies

We are about to go on vacation and I needed to use up some bananas.  So I made these 4 Ingredient Banana Coconut Cookies.  These were a cinch to make!  Less than 20 minutes.

I added chocolate chips to mine, but that is totally optional.  I can see raisins also working well in this recipe.  These cookies are healthy enough for breakfast! 🙂

This recipe is super easy.  Vegan, gluten free and grain free.  I used quinoa flakes, so there is a nice protein boost in here as well. If you don’t want to use quinoa flakes, you can always use quick oats in place of them.  These cookies freeze great, so make a big batch and freeze some for busy mornings.

Almond Butter Cranberry Muffins (Vegan)

My husband is on a muffin kick.  So I made these Almond Butter Cranberry Muffins for him to take to work.  These healthy Almond Butter Muffins freeze very well, so you can make a big batch for easy breakfasts on the go.  The cranberries I used were sweetened with fruit.

If you can’t find cranberries sweetened with fruit, you can also use raisins.  Either way will be delicious.  To make the oat flour, I just ground up some rolled oats in the Vitamix.  If you like these, you may also like my pumpkin muffins or my chocolate coffee muffins.
