If you have been following me for awhile, you know I love all things Almond Joy flavored.  These Easy Almond Joy Candy Cups are my latest creation.  I know you are going to love them!

There are a few things that make this recipe great.  They are vegan, gluten free and paleo approved.  The contain ZERO refined sugar, and there is no baking required!  Only 5 simple ingredients!

I have such a sweet tooth, so I am always thinking of new ways to enjoy sweets in a better way.  Since these contain a good amount of fat, and they are super rich, you don’t need much to satisfy.  I made mine in standard sized muffin pans and got 6, but you can do a bite size up if you like too!

Flourless Almond Joy Blondies (Vegan)

As you know, I am a big fan of flourless treats.  These Flourless Almond Joy Blondies are the latest creation.  I got the idea as I was trying to go to sleep the other night.  Yes I think about food all the time lol!  So in the morning I stopped by the store to pick up everything that I needed .

Almond Joy Cookies

If you have been following this blog for quite some time, you know that I love to bake.  Before I started to eat clean, I loved to bake all of those decadent gooey desserts that you see on sites like Pinterest.  Changing my diet has taught me to be creative in baking healthier sweets.  My husband is a big fan of almond joy, so he had the idea to make almond joy cookies.

These cookies were inspired by my Almond Joy Energy Bites.  They are gluten free as well as vegan.  My husband worked from home yesterday and he got to taste test them right out of the oven.  To quote him verbatim, “These may be the most delicious things you have ever made.”  So I had to share them with all of you!

Almond Joy Cookies

Almond Joy Cookies

Prep Time 10 min Cook Time 12 min Serves 12 cookies     adjust servings

The taste of the candy bar with none of the guilt.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.  (I actually ground up some rolled oats to make my oat flour.)
  3. In a saucepan on med heat, combine the almond butter, coconut oil and maple syrup and stir until smooth.
  4. Let mixture cool.
  5. Once it’s cooled add it to the dry ingredients and also add the vanilla, egg and almond extract.
  6. Once everything is well combined, fold in the dark chocolate.
  7. Drop cookies onto a lined baking sheet. 
  8. Bake for about 12 minutes and serve.

Recipe Notes

Store them in a jar if they will be eaten quickly. For longer storage, keep them in the fridge or even freeze them . Enjoy!

Almond Joy Energy Bites (Vegan & Gluten Free)

Almond Joy Energy Bites.  This past Sunday, we made Almond Joy Waffles for breakfast. They were a big hit so I decided I would try some almond joy energy bites with similar ingredients.

My husband liked these healthy vegan almond energy bites so much, that I had to stop him from eating them all.  I still needed to take pictures. A common food blogger problem haha!

It’s funny because as soon as he gets home from work, I am shoving things in his face to taste test.  I like to get his approval as well as my three year old.

She helped me make these and kept trying to sneak the batter when she thought I wasn’t looking.  Sneaky sneaky.  Can’t say I blame her.  They are delicious!

Almond Joy Energy Bites

Almond Joy Energy Bites

Prep Time 10 min Serves 12 balls     adjust servings

Ingredients

  • 1 cup almonds
  • 1 cup shredded unsweetened coconut
  • 10-12 medjool dates
  • 1/4-1/2 tsp almond extract (I used 1/4 only because my husband doesn't like a strong almond flavor)
  • 1 T coconut oil melted
  • 2 T water
  • 1/4 cup chocolate chips I used carob chips

Instructions

  1. In a food processor, mix the almonds and coconut until they are fine.
  2. Then add the dates, coconut oil and water and continue to pulse until you see a dough start to form.
  3. Roll into balls and place in the fridge to firm up.
