Pumpkin Chocolate Bars

My favorite time of year is here!  Fall.  Don’t you just love it?  Pumpkin on all the things!  I am starting with these delectable Pumpkin Chocolate Bars.  This recipe was inspired by this amazing recipe on Pinch of Yum.  As soon as I saw it, I thought about making a pumpkin version.  These bars came out great!

Chocolate Chip Quinoa Blondies

These Chocolate Chip Quinoa Blondies may be the best dessert I have made in a while.  I already have several Quinoa Brownies and also Quinoa Cookies on the blog.  I just never occurred to me to create a blondie until now. I am so glad I did and this opens the door up to different varieties in the future too!

Chocolate Rice Crispy Squares

Rice crispy treats are one of those iconic recipes from childhood.  Well, I just gave them a major upgrade with these easy Chocolate Rice Crispy Squares.  I love this recipe because it only contains simple ingredients and it can literally be made in just a few minutes.  If you love chocolate, you may also want to try my fudgy flourless brownies and my chocolate coffee cheesecake.

These delicious chocolate bars are vegan and gluten free. They can easily be made nut free by using sunflower butter in place of the cashew butter.  I used brown rice cereal in this recipe.  Only ingredient is brown puffed rice. You should be able to find it at any health food store.  I have also seen it at Target on occasion.

Peanut Butter Bars

If you have been following this blog for a while, you know how much I love nut butters.  I even wrote a whole cookbook about them! If you love nut butter too, you will LOVE these Peanut Butter Bars.  They contain very little added sugar and only 5 ingredients.  You don’t even need a food processor or mixer to make them!

These bars are vegan and gluten free.  You can make them with sunflower butter or almond butter to keep them paleo friendly as well.  These Peanut Butter Bars are super rich too.  All you need is a little to satisfy your sweet tooth.  If you didn’t want to use chocolate chips, you can always use my 3 ingredient chocolate bar recipe for the chocolate part.  If you choose that route, I would suggest keeping the bars in the freezer, not the fridge.  If you also love peanut butter, you will also love my 3 ingredient peanut butter muffins and my 3 ingredient peanut butter cookies.
