These healthy bites are a cinch to make too.  They are vegan, gluten free AND paleo friendly as well!  I hope you love them as much as we did.  Ours didn’t even last one day.

If you want to add even more nutrition, you can also add chia, flax or seeds to these. If you choose to do that, you may need to adjust the liquids as well.

I used roasted and unsalted cashew butter when making these.  If you use unsalted, I suggest adding a little salt to the recipe.  Maybe a pinch?

Vegan Blueberry Cheesecake.  Just because you are vegan, does not mean you need to miss out on cheesecake.  Cashews serve as a wonderful replacement for cheese in this Vegan and Gluten Free Blueberry Cheesecake.

I made a 6 inch round cheesecake, but you can also do mini cheesecake bites if you prefer.  This healthy dessert makes the perfect use of those blueberries.

If you are not a fan of blueberries, you can use another berry if you like. Or even a combination of berries.

Blueberry Almond Scones (Vegan and Gluten Free)

Blueberry Almond Scones for you today.  A few weeks ago, a came across a recipe for Paleo Blueberry Scones.  It was on the blog Fed and Fit.  She has lots of great recipes!  Definitely check her out!

I have been craving scones for while now.  These were so delicious and I can see so many variations on this recipe in the future.

I love almond extract, so I try and add it whenever I can.  I went so well in these blueberry almond scones.

I also made mine vegan by using flax eggs.  I loved that the original recipe called for cashews as a base.  You all know I love making all my flourless cookie recipes with cashews!

Lemon Blueberry Donuts

I love combining lemon and blueberry together.  That is exactly what I did to make these Lemon Blueberry Donuts.  In addition to adding lemon and blueberry, I also added a creamy coconut frosting.  Coconut also goes very well with lemon and blueberry.  You can never have too many donut recipes, right?  Especially when they are healthy donut recipes.  My kids were trying to sneak bites of these lemon blueberry donuts as I was trying to take the picture!  The life of a food blogger mom!  If you also like lemon and blueberry, you may also like my lemon blueberry ice cream or my lemon blueberry cookies.

This healthy donut recipe is vegan and gluten free.  I used fresh blueberries in my recipe, but I bet you could also use frozen blueberries.  Just let them thaw before using in this recipe.  I think this healthy donut recipe would also be good with strawberries or raspberries!

Blueberry Crumb Bars (Vegan)

I am a big fan of fruity desserts.  That is why I made these Blueberry Crumb Bars.   These Blueberry Crumb Bars are actually healthy enough for breakfast too.  They didn’t last long at our house!  I made these healthy crumb bars oil free too.

We are currently staying at my inlaw’s house as our kitchen gets renovated.  I can tell you that everyone  in the house enjoyed these crumb bars.  If you like fruit bars, you may also enjoy my Homemade Nutri-grain Bars or my Homemade Fig Newtons.

I went a little overboard on the jelly, so mine is oozing out the sides.  I recommend not spreading the jelly all the way to the end.  Leave about a 1 inch boarder because the jam will spread.

These were still delicious though.  In addition to being oil free, these bars are also gluten free and vegan. 🙂  This recipe was adapted from my Pumpkin Raspberry Oat Bars.

Blueberry Muffin Smoothie

You guys!  This blueberry muffin smoothie is so good!  If you have been following this blog for awhile, you know I prefer to add real food to smoothies instead of protein powder.  I think protein powder is too expensive and I also prefer to eat things the way nature intended.  This is my latest healthy smoothie recipe.   This blueberry muffin smoothie contains 8 1/2 grams of protein.  It is a breakfast that will keep you full for some time.  If you can’t eat oats, quinoa flakes would be a good substitute.   1/4 cup of quinoa flakes contains about 4 grams of protein.  You can whip this healthy smoothie up in just minutes!

Another great thing you could do with this smoothie recipe, is make popsicles or smoothie pops with it.  I like these molds.  My kids love them too! You could probably even sneak some greens in here.  The blueberries would mask the color and the banana would mask the flavor of the greens.   Trust me.  I fool my kids all the time. 🙂
