Chocolate Pumpkin Loaves (Vegan and Gluten Free)

Chocolate Pumpkin Loaves.  I have many pumpkin recipes, but I haven’t made a chocolate pumpkin recipe until now.  My husband is a huge chocolate fan, so these chocolate pumpkin vegan loaves were right up his alley.

I am not that into chocolate (gasp!), so I prefer the eat my regular pumpkin muffins.  These got his stamp of approval though!

If you want to boost the chocolate flavor even more, you can add in some dark chocolate chips.

These Chocolate Pumpkin Loaves are vegan and gluten free.  Super simple to make too.  If you don’t have a mini loaf pan, you can also make these as muffins.  Just adjust the cooking time to about 10 minutes.

Cranberry Corn Muffins

Do you like your cornbread sweet or savory?  I prefer it sweet so that is why I made these Cranberry Corn Muffins.  Imagine a sweet corn muffin loaded with cranberries.  I used fruit sweetened, dried cranberries, but you can use fresh cranberries if you like a little tart with your sweet.  These Cranberry Corn Muffins contain no oil.  I am really trying to limit my oils lately.  Don’t get me wrong, I love healthy fats, it’s just the use of oil I am limiting.

These corn muffins are vegan and gluten free.  If you didn’t want to use cranberries, you could use raisins instead.  I also did think about using fresh blueberries instead of the cranberries.  I just didn’t want to pay the price for fresh blueberries out of season.  I think these would also be delicious with my homemade cranberry sauce.  Or maybe even my blueberry chia jam.  Yum!

Chocolate Zucchini Muffins (Vegan and Gluten Free)

Chocolate Zucchini Muffins.  The other day, my in-laws gave us a bunch of zucchini from their neighbor’s garden.  I have been wanting to make some healthy zucchini muffins for a while.

So I set out to make some muffins.  My vegan zucchini muffins are not only vegan, but they are gluten free as well.

These muffins not only pack a hidden serving of veggies for the kids, but they are also oil free as well.  This recipe is very easy to make and freezes well too.

Beer Bread Recipe (Vegan)

I love Beer Bread.  I made it with white whole wheat flour.  When I was writing my post about flours, I learned that there is such a thing as white whole wheat flour.

I always thought if a flour had the word white in front of it, that it was highly refined.  Not the case with white whole wheat.  It is a whole grain from a different kind of wheat.

So I bought a bag last weekend.  First, I made my Pumpkin Spiced Waffles with it.  They came out light and fluffy, much different than when I bake with whole wheat flour.

Then, I thought it would be great to make a bread with.  So I decided on beer bread.

My first batch of beer bread did not come out well at all.  I cooked it to long and the taste was off.  So this is my second attempt and it came out great.

This bread is so easy to make.  There is not much kneading involved at all really.  I didn’t let my dough rise either.  It has a great taste and can be used as a burger bun or eaten with soup or chili.

This beer bread is:

Prep Time 10 min Cook Time 27 min

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix everything in one bowl.
  3. Using your hands, gather the dough into a ball and knead for just about a minute.
  4. Spoon dough into a greased mini loaf pan or bread pan. I used a mini loaf pan .
  5. If you use a bread pan, you may have to up the cooking time a bit. Bake in the oven for 23-27 minutes. Let cool before removing from pan.

Apple Cinnamon Bread (Vegan)

Apple Cinnamon Bread.  Today it is rainy and dreary out so I spent the morning in the kitchen.  When you have young kiddos like I do, you have no choice but to get up at the crack.  I love them, but man I wish they would sleep in once and a while.  So I set out to make some apple cinnamon bread.

I love apples and have made many dishes with them.  I have Apple Cinnamon Baked Oatmeal and also my Healthy Apple Cobbler.  I used store bought organic applesauce for this recipe, but it would be even better made with my Crock Pot Applesauce.  My house smells fantastic right now.  Who needs air freshener filled with chemicals when you can bake something that smells fabulous!

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet in another.
  4. Add wet to dry.
  5. Spoon batter into mini loaf or muffin pans . I used mini loaf pans and ended up baking these for about 17 minutes.
  6. If you are doing muffins, you may want to check on them after about 12 minutes to see if your toothpick comes out dry.
