Pumpkin Spiced Waffles

I know it’s not exactly fall anymore, but I didn’t have my waffle iron back in the fall so I am making pumpkin spiced waffles now. 🙂  Since we got the waffle iron, waffles have become a weekend tradition.  My daughter Meadow seems to just love them.  I have made Blueberry Oatmeal Waffles and Strawberry Banana Waffles in the past.  This week I made these pumpkin spiced waffles and they were a hit!

Recently, in my quest to learn all about flours, I learned that there is such a thing as white whole wheat and that it is actually a whole grain.  So I bought a bag and made these with it.  I think they turned out much fluffier than waffles made with whole wheat.  I can’t wait to experiment more with it.  I find it works well to mix all the dry ingredients the night before so these can be made quickly in the morning for my hungry three year old.

Pumpkin Spiced Waffles

Pumpkin Spiced Waffles

Prep Time 10 min Cook Time 10 min Serves 5-6 large waffles     adjust servings

Ingredients

  • 2 1/2 cups white whole wheat flour
  • 1 can pumpkin or 2 cups fresh cooked
  • 2 cups almond milk
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1 T coconut sugar
  • 1 T coconut oil (melted)
  • 1 flax egg

Instructions

  1. Turn on the waffle iron and let it heat up. 
  2. In one bowl, mix the dry ingredients. 
  3. In another bowl mix wet. 
  4. Add wet to dry being careful not to over-mix. 
  5. Scoop out about 1/2 cup size batter and spread onto a greased waffle iron. I greased my waffle iron with walnut oil, but coconut oil will work well too.

Recipe Notes

I got about 5-6 big waffles out of this recipe. You can freeze the extras if you have any. Just place a sheet of parchment paper in between each one. Easy peasy.

Almond Butter Chocolate Chip Baked Oatmeal

Almond Butter Chocolate Chip Baked Oatmeal.  I made you some baked oatmeal!  I just love oats.  They are much more satisfying than a bowl of cold cereal.

Since this healthy baked oatmeal recipe is very high in fiber, it will keep you full for a long time afterward.  Lately, I have been doing a few baked oatmeal dishes which have become my new favorite way to eat oats.

First, I did the Apple Cinnamon Baked Oatmeal.  Then the Strawberry Banana Baked Oatmeal.  Now this latest recipe.

 

Almond Butter Chocolate Chip Baked Oatmeal

 

This is my new favorite, because, let’s face it, almond butter makes everything better!  Throw in some chocolate chips and you have yourself a pretty heavenly little breakfast.

High protein too.  These would be especially decadent if you topped them with my Sweet Peanut Butter Spread.

Almond Butter Chocolate Chip Baked Oatmeal

Prep Time 10 min Cook Time 15 min Serves 6 muffins     adjust servings

Ingredients

  • 2 cups gluten free rolled oats
  • 1/3 cup almond butter
  • 2 ripe bananas smashed (you can also use 1/2 cup applesauce or plain yogurt)
  • 3 T maple syrup
  • 1 tsp vanilla extract
  • 2-3 T almond milk
  • 1/4 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350F
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet into another.
  4. Add wet to dry and mix well.
  5. Grease a muffin tin and spoon batter into each cup until it is about 3/4 full.
  6. Bake in the oven for 15-18 minutes.

I used a jumbo muffin pan and got three of them out of this batch. If you use regular size muffin cups, you will probably get about 6.

Strawberry Banana Waffles

At our house, Sundays have a morning tradition of homemade waffles or pancakes.  Last week we had Blueberry Oatmeal Waffles.  This week, my daughter requested strawberry banana waffles.  So that is what we had.

I mix all the dry ingredients the night before so it takes only minutes to whip them up in the morning.  I got five large waffles out of this batch.  There were hardly any leftovers.  I used freeze dried strawberries for this recipe, so if you use fresh, you may need to slice them thin and use a little bit less liquid.

  1. Mix all the dry ingredients and stir well.
  2. Then add the wet and mix only until combined. Be careful not to over mix. 
  3. That’s all there is to it.  I hope you all enjoy these as much as we did.

Coconut Cream Larabars

These Coconut Cream Larabars are where it’s at. No matter who you talk to, most everyone seems to love larabar,  My two most viewed posts on the blog are the Peanut Butter Granola Bars and the Homemade Clif Bars.

The first larabar recipe I created was the chocolate brownie.  I think these healthy larabars came out even better!

These literally took about 5 minutes to make.  Can it get any easier?  I love recipes like this.  The store bought Larabars cost $1.50 a piece.  That can get pretty pricey if you are buying a lot of them.  So here is my recipe.  I hope you like it as much as we did.

Prep Time 20 min

Instructions

  1. Mix the almonds, coconut and cashews in the food processor until fine.
  2. Then add the dates, oil and water and pulse until a dough forms.
  3. Line an 8X8 pan with parchment paper leaving enough room for some to come out the sides. That way, the bars will be easy to remove and cut with a pizza cutter.
  4. Press down the down so that it is packed well and place in the fridge to set.
  5. It will take an hour or two. Slice and eat. These should keep in the fridge for a couple weeks.

Coconut Strawberry Muffins

My daughter has been requesting coconut trawberry muffins for a while now.  Strawberries have been very expensive lately so it’s been quite some time since we had some.  Well I was going through my freezer today and discovered a bag of frozen organic strawberries so I decided to try to make her some coconut strawberry muffins.

This recipe is very interesting.  Since I have been doing my Budget Grocery Challenge, I have been unable to run to the store on a whim so I have had to make do with what I find in the pantry.  This has forced me to be pretty creative.  I am really glad this has happened, because it is opening my eyes to all kinds of different flours.  If you are expecting a fluffy muffin these are not for you.  They are pretty dense, but not in a bad way, I promise.  They are almost the texture of brownies.  In fact, next time, I will probably make them into brownies.  After all, they are kid approved! 🙂

Ingredients

  • 1 1/2 cup chickpea flour
  • 1/4 cup ground coconut or coconut flour
  • 1/4 ww pastry flour
  • 1 egg (I used a flax egg)
  • 1/3 cup coconut sugar
  • 1 T coconut oil
  • 1/3 cup applesauce
  • 1/2 cup milk
  • 1 cup sliced strawberries (I used frozen)

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. In another bowl mix all the wet.
  4. Add dry to wet.
  5. Fold in the strawberries.
  6. Spoon batter into muffin cups and bake in the oven for about 12-14 minutes.
  7. Wait until they are completely cooled before removing from the pan.
