Asian Chopped Salad

I just love salads of all kinds.  I eat them all year long.  My husband made this Asian Chopped Salad this weekend and it was a huge hit.  I can see it going in our regular rotation.   This recipe makes a lot, so it would be great for parties.  For the dressing, he slightly tweaked our Thai Peanut Sauce recipe and it came out great!  If you love salads too, you may also like this post.  I also have a post filled with salad dressing recipes that is worth checking out.

If you are avoiding soy, you can use green peas instead of the edamame.  I also think toasting the cashews would give them an extra punch of flavor.  This salad is vegan and gluten free.

Dairy Free Sour Cream Recipe

Y’all this Dairy Free Sour Cream is where it’s at.  Many people are moving away from dairy these days.  Maybe because so many kids these days cannot tolerate it.  My own daughter is allergic to dairy.

It makes her skin break out.  Sure there are dairy free sour cream products on the market, but those are usually soy based.

Since most soy in this country is GMO, I thought I would come up with my own vegan and paleo sour cream recipe.

This is also a vegan sour cream recipe!  It’s super easy to make too!  In addition to this recipe, I also have a dairy free cheese sauce and a dairy free ranch dressing.

I can’t think of a single person that doesn’t like cashews or chocolate.  Cashews are so buttery and delicious.  When you pair cashews with salted chocolate, you really get a match made in heaven.  These salted cashew chocolate clusters are so good.  In fact, my husband ate most of them in about 2 days! Salty and sweet is the best combination.  These salted cashew chocolate clusters can make a healthier snack alternative to unhealthy candy bars.

Cashew Cookie Larabar Bites (Vegan)

Cashew Cookie Larabar Bites.  So I have almost made every single larabar flavor there is now.  They are just so easy and taste way better than the store bought versions.

I made the Carrot Cake Larabars the other day and my baby girl loved them so much!  This is huge because she has a G tube and eats a lot of her food through that.

So to have her interested in orally enjoying those snacks was a big deal.  I have had many requests for the Cashew Cookie flavor so I whipped them up today.  I added 1 extra ingredient that I think takes these to the next level.

The ground vanilla beans really perk this recipe right up.  They are so good! You can also use vanilla extract, but I would only use 1 teaspoon instead of two.

Instructions

  1. In the food processor , grind the cashews into a fine consistency. 
  2. Then add in the remaining ingredients and pulse until a dough starts to form.
  3. Roll into balls and place on a parchment lined plate.
  4. Stick the balls in the fridge for about an hour to firm up. I got 12 balls out of my batch. Enjoy!
