Healthy Turmeric Cauliflower Rice

You have to try this Healthy Turmeric Cauliflower Rice!  Have you heard about the benefits of turmeric? Turmeric is anti-inflammatory, can increase antioxidants, and lowers your risk for heart disease to name a few.

Cauliflower rice can be a great alternative for those trying to eat a low-carb diet.  It’s very low in calories as well. I don’t even really like cauliflower, but I do enjoy cauliflower rice. It’s super easy to make too.  So is this healthy recipe.

This recipe is vegan, gluten free and paleo approved.  You can turn it into a main dish by adding some vegetables and your favorite protein.  I think carrots and peppers would go really well with the flavors.  For protein, I would suggest chickpeas or tofu if you eat soy. It’s very versatile!

Coconut Curry Cauliflower

I love my veggies, but cauliflower has always been one that I avoided.  That is, until I made this Coconut Curry Cauliflower!  Coconut and curry were made for each other and the flavors go so well in this easy side dish.  If you wanted to make this a complete meal, you could serve it over rice or quinoa.  I also think the additions of some greens, like spinach, would be delicious.  I used the full fat canned coconut cream to make this dish extra rich in flavor and texture.

Easy Sesame Cauliflower

My husband Marcus has been wanting to do a Sesame Cauliflower recipe for a while now.  Well he finally did and I am here to share this Easy Sesame Cauliflower recipe with you!  Think sesame chicken minus the chicken.  This stuff was really good!  I could see this sesame cauliflower sauce being used on all kinds of things.  Like in a stir fry or as a veggie dip.  Or even a marinade.  I love recipes with multiple uses.  Don’t you?  Kind of like my Thai Peanut Sauce.

You can add all kinds of veggies into this recipe.   I could see snow peas, broccoli and red bell peppers being great additions.  Also mushrooms.  You can make the sauce and saute right away, or you can let the cauliflower and other veggies marinate for an hour or two.  I will definitely try the marinade next time!

Creamy Cauliflower Potato Soup

Cauliflower is just one of those things I don’t do enough with.  It is so healthy and I really want to try and incorporate more into my diet.  One of my favorite things to make with cauliflower is cauliflower popcorn.  Now was about time to make a cauliflower potato soup.  The cauliflower adds a nice creamy texture without adding a lot of calories.
