Now is the time of year where people stay inside and do more cooking.  Especially on those chilly days.  Well I have a new slow cooker recipe for you. Slow Cooker Gingerbread Oats will make your house smell like the holidays.  If you love all things gingerbread, you will also love my gingerbread muffins, gingerbread cookies and gingerbread baked oatmeal.

These slow cooker gingerbread oats are vegan and gluten free.  You can make them with either water or milk.  I chose water for mine.  This is very budget friendly and makes a lot.  Make it up on a Sunday and have breakfast for the entire workweek. My husband takes it to work every morning.

Cream of Broccoli Soup

For the longest time, my husband has been wanting to make a cream of broccoli soup.  I wasn’t sure he could successfully make a vegan cream of broccoli soup.  He totally outdid himself with this vegan cream of broccoli soup! Despite the name, this healthy soup has no cream!  This soup is really easy to make too.  If you are a fan of soups, you may also like this post full of healthy soup recipes.

Cream of Broccoli Soup - My Whole Food Life

I used almond milk in my recipe, but you could also use full fat coconut milk for an extra rich texture.  Another option would be to top this with a cashew cream.  Yum!  This cream of broccoli soup is vegan and gluten free.  I added some nutritional yeast for a slight cheesy flavor.  I cooked this on the stove top, but you can also cook this soup in the crock pot as well.

Chickpea Vegetable Soup

It has been seriously cold here this week in Dallas.  So this Chickpea Vegetable Soup was in order.  This Chickpea Vegetable Soup is super easy to make.   You can make this healthy soup in your crock pot, or on the stove.  Either way works great.  This healthy vegetable soup came about when I discovered my peppers and tomatoes were starting to look a little wrinkled and soft.  I wanted to use them up so I made this soup.  I hope you enjoy it.  If you like soups as well you may enjoy this post.

I added the chickpeas to make this vegetable soup a complete meal.  I also had tons of chickpeas to use up so they were perfect.  This soup makes a large amount and freezes well.  You can freeze in serving sized containers for easy grab and go meals.  I topped mine with avocado because avocado makes everything better. 🙂
