Chunky Vegetable Soup

Fall is coming and I am going to start posting more soup recipes.  Starting with this Chunky Vegetable Soup.  I made this in the slow cooker and it couldn’t have been easier!  I used the slow cooker instead of the pressure cooker because this makes a big batch.  I didn’t think I could fit the whole thing in my pressure cooker.

I love using the slow cooker because the soup can cook even while you are not home.  In fact, when we made this, we left the house for most of the day and came home to a delicious smell.  It was making my mouth water.

As it’s written, this healthy soup recipe is vegan, gluten free, paleo and oil free.  If you wanted to make it more hearty, I think adding kidney beans or brown lentils may be nice additions.

Slow Cooker Apple Butter

I had about 8 apples to use up in the fridge, so I decided to attempt some slow cooker apple butter. I was so glad I did.  Not only was it super easy to make, but it let me use up all those bruised apples!

I added a little bit of sweetener to my apples because I wanted to make sure this was very different than my slow cooker applesauce.  I thought the small amount of sugar would help give it a thicker texture once cooked down.  I really do think it helped, but next time I am going to try it with no sugar at all and see how it turns out.

I know some of you are probably wondering if you can make this in the Instant Pot.  I did find this recipe online if you want to try it.  This wonderful apple butter will make your house smell amazing as it cooks!  It’s perfect to use as a spread or even as a dip. The possibilities are endless.

These slow cooker gingerbread oats are vegan and gluten free.  You can make them with either water or milk.  I chose water for mine.  This is very budget friendly and makes a lot.  Make it up on a Sunday and have breakfast for the entire workweek. My husband takes it to work every morning.

Cream of Broccoli Soup

For the longest time, my husband has been wanting to make a cream of broccoli soup.  I wasn’t sure he could successfully make a vegan cream of broccoli soup.  He totally outdid himself with this vegan cream of broccoli soup! Despite the name, this healthy soup has no cream!  This soup is really easy to make too.  If you are a fan of soups, you may also like this post full of healthy soup recipes.

I used almond milk in my recipe, but you could also use full fat coconut milk for an extra rich texture.  Another option would be to top this with a cashew cream.  Yum!  This cream of broccoli soup is vegan and gluten free.  I added some nutritional yeast for a slight cheesy flavor.  I cooked this on the stove top, but you can also cook this soup in the crock pot as well.

Chickpea Vegetable Soup

It has been seriously cold here this week in Dallas.  So this Chickpea Vegetable Soup was in order.  This Chickpea Vegetable Soup is super easy to make.   You can make this healthy soup in your crock pot, or on the stove.  Either way works great.  This healthy vegetable soup came about when I discovered my peppers and tomatoes were starting to look a little wrinkled and soft.  I wanted to use them up so I made this soup.  I hope you enjoy it.  If you like soups as well you may enjoy this post.

I added the chickpeas to make this vegetable soup a complete meal.  I also had tons of chickpeas to use up so they were perfect.  This soup makes a large amount and freezes well.  You can freeze in serving sized containers for easy grab and go meals.  I topped mine with avocado because avocado makes everything better. 🙂
