The other day, I saw this video on Facebook.  It was the inspiration for these No Bake Oat Cookies. My recipe is not only healthier than the original, it is also vegan.  Yay!  And really, who doesn’t like a no bake cookie?  You can literally whip these delectable cookies up in just a matter of minutes.

Coconut Pecan Cookies

New cookie recipe for you today.  Originally, I set out to make cowboy cookies.  Then after I had them in the oven, I realized I forgot to add the chocolate chips and oats.  Oops!  Even without those 2 things, these coconut pecan cookies still came out very yummy.  They almost reminded me of the flavors in pecan sandies.  In any case, these flourless cookies were delicious.

Vegan Blueberry Cheesecake.  Just because you are vegan, does not mean you need to miss out on cheesecake.  Cashews serve as a wonderful replacement for cheese in this Vegan and Gluten Free Blueberry Cheesecake.

I made a 6 inch round cheesecake, but you can also do mini cheesecake bites if you prefer.  This healthy dessert makes the perfect use of those blueberries.

Pecan Caramel Ice Cream

I love making ice cream. It’s one of those things that looks hard until you try it.  This pecan and caramel ice cream might be one of the best ice creams I have ever made. This stuff is good… I really can’t say enough about this pecan caramel ice cream recipe.

You are probably wondering how I made a vegan caramel.  Dates can make an incredible caramel if you just blend them with a little water.  I love that I can make a caramel with zero added sugar.  I also added very little sugar to the ice cream mixture itself.  This recipe is like my 3 ingredient Peanut Butter Ice Cream.  Just a few simple ingredients is all you need.

Pecan Caramel Ice Cream

Prep Time 20 min Serves 4-5 cups     adjust servings

Ingredients

    For the caramel

    For the ice cream

    Instructions

      For the caramel

      1. In a blender or food processor , blend up the ingredients for the caramel.
      2. Set aside.

      For the ice cream

      1. In the ice cream machine , add the ingredients for the ice cream, except the pecans and turn on the machine.
      2. After about 5 minutes, drizzle the caramel mixture into the ice cream bowl.
      3. When the ice cream looks like it’s almost done, add in the nuts.

      Raspberry Nutella Tarts

      I have said this before, but growing up with a German mother meant we ate a lot of Nutella.  I loved it as a child.  Now I know that store bought Nutella is very unhealthy.  So I have created my own Healthy Homemade Nutella.  I have used it in many dishes on this blog.  Now it is time for a Raspberry Nutella Tart.

      We all need to enjoy a tart every once and a while.  I love them and they are perfect for summer.  There is no cooking involved!  These are completely raw.  They are also vegan, grain free and gluten free!  If you feel compelled to cook the crust, you can.  You just don’t need to.  These are very easy to make even though they look kind of fancy.

      Raspberry Nutella Tarts

      Raspberry Nutella Tarts

      Prep Time 30 min Serves 5 tarts     adjust servings

      Ingredients

        For the crust

        For the filling

        For the fruit

        • 2 cups fresh raspberries or strawberries

        Instructions

          For the crust

          1. In a food processor , grind up the almonds until they are a course consistency.
          2. Once they are ground, add in the dates and water until the dough comes together. If you are not using a high powered food processor , you might want to soak the dates for 5 minutes in water to soften them.
          3. Grease your tart pan or mini tart pan s and then press the dough into the pan and up the sides. The dough will be sticky and I find that working with wet hands helps.
          4. Once the dough is set into all the tarts, place them in the fridge to firm up. About 30 minutes.

          For the filling

          1. While the tarts are setting up, you can make the filling. In the food processor , grind up the hazelnuts into as fine of a powder you can get them.
          2. Once they are ground, add in the remaining ingredients. If the mixture seems too thick, you can always add a bit more milk.
          3. Once the crusts are set, spoon the filling into each one and top with the fruit.
          4. Enjoy!
