Quinoa with Roasted Vegetables

I am all about easy recipes and this quinoa with roasted vegetables is no exception.  Not only is this quinoa with roasted vegetables easy, but it calls for ingredients you may already have in your kitchen!  It’s going to be one of my go to recipes for sure.  Great in summer or winter.  Eat it hot or cold.  If you like quinoa recipes, you may also like this and this.

I was really amazed that this dish had so much flavor with such simple ingredients.  Another thing you can probably do with this is to cook the quinoa in vegetable broth instead of water.  It should add an even deeper level of flavor.  This dish is vegan and gluten free.  I hope you enjoy it.

Chickpea Curry Lettuce Wraps

I love curry dishes.  Do you?  Last night I got the idea to do a chickpea curry.  I already have a pumpkin coconut curry on my blog.  Since I love chickpeas, I really wanted to include chickpeas in a curry dish.   That is how this chickpea curry was born.

I decided to put my chickpea curry in lettuce wraps.  So I sent my husband to the store for romaine lettuce.  He came back with this red leaf lettuce you see pictured.  I think the red leaf lettuce worked fine, but I wanted to let you all know my original vision was a romaine lettuce wrap.  Honestly, I think this chickpea curry is great on it’s own, or in the lettuce wrap.  It’s a great way to get some turmeric in your diet too.  This dish is vegan and gluten free. Miso Stir Fry with Cauliflower Rice

I know many of you avoid soy products, but I think it’s quite okay to include some fermented soy products in your diet.  The Asians have been eating them for years.  The real concern comes when you are already ingesting a large amount of soy found in processed foods.  As long as you avoid processed foods, a little soy will not be a big deal.  Since most soy products in this country are GMO, it is very important to look for soy products that have been non GMO verified.  This miso stir fry with cauliflower rice was both delicious and filling.  I added tofu to mine, but you could really use any protein you like in this dish.

This miso stir fry was created by my husband.  I came up with the idea, and he put it all together.  He is way better with the savory dishes than I am. I wanted to do cauliflower rice again because I loved it so much in this dish.  This miso stir fry may seem like it has a lot of steps, but you can make the tofu and cauliflower rice ahead of time.  That is what I did.
