I have a new entree idea for you.  Roasted Vegetables with Quinoa.  This recipe is super healthy and easy + you can really use any veggies you have on hand.

This meal is vegan and gluten free. Like I said before, any veggies work.  The veggies I chose for this recipe are the ones I like best.  I have also used Brussels sprouts, but I didn’t have any on hand at the time.

Veggie Loaded Chickpea Stir Fry

If you are trying to eat more veggies, you should try this Veggie Loaded Chickpea Stir Fry.  It’s super easy and you can really use any veggies you have on hand.  Just like vegetable broth, it’s a great way to use up leftover odds and ends in the fridge.

The chickpeas add protein to make this a complete meal. You could also serve it with rice or quinoa.  Toasted cashews would be a nice option too.

This is vegan and gluten free and grain free!  For a paleo version, you can skip the chickpeas and serve over cauliflower rice.

Vegan Egg Roll in a Bowl

Who doesn’t love an egg roll?  I can never find egg roll wrappers that don’t contain egg so I made this Vegan Egg Roll in a Bowl. It tastes exactly like the filling found in those delectable egg rolls, but without the fried wrappers!  I know typically egg rolls have added meat, so I added the sliced portoblello mushrooms to provide a meaty texture in place of the meat.

If you want to add some extra protein to this stir fry, you can add toasted peanuts or cashews.  Quinoa may be another nice addition.

Healthy Lentil Stuffed Peppers

I have a healthy dinner idea for you.  These Healthy Lentil Stuffed Peppers. They are super simple to make and are great for a weeknight meal!  You can even make the lentil mixture ahead of time, so all you have to do is cook the peppers and fill.

This recipe not only includes the stuffed peppers, but you also get a recipe for homemade taco seasoning as well.  You will have some left over after making this recipe.  The taco seasoning is really yummy on roasted veggies  as well!

Lentil Stuffed Acorn Squash

Is there a vegan in your family?  I have the perfect recipe for you.  This Lentil Stuffed Acorn Squash is healthy, easy, and very flavorful!  For Thanksgiving a few years ago, we served a wild rice stuffed acorn squash and it was a huge success. Even with the meat eaters!

You can make the filling a day ahead if you like.  It should hold up great.  Then on the day you are serving, all you need to do is roast the squash and assemble.

I love all the colors in this healthy recipe.  When I went to buy the squash for this, they only had tiny acorn squashes, so that is why mine look kind of small.  However, the beauty of this recipe is that you can make the squash any size you like.  The filling is also pretty delicious on it’s own.

Kidney Bean Veggie Burgers
