No Bake Oat Bars (Vegan and Gluten Free)

I have a new snack idea for you today.  This one is No Bake Oat Bars.  For this recipe, I was inspired by my homemade nutri-grain bars.

I wanted to make a similar recipe that requires less work and ingredients.  This easy oat bar recipe only call for a few simple ingredients.  I love that. So you probably have the ingredients to make them already.  You can use whatever flavor jam you like.

This recipe is also nut free.  If you like fruit bars, you may also like my blueberry oat bars.

Have you heard about matcha?  It’s a concentrated, powerful powdered form of green tea.  Matcha has been named one of the most potent superfoods. Matcha is full of antioxidants, helps fight free radicals, boost metabolism, lower cholesterol and so much more!  I have done a little cooking with it in the past, see my matcha truffles, but Miryam has come up with all kinds of creative ways to use it.  For example in this healthy blueberry crisp.  I would have never thought to add matcha, but it really adds a nice flavor.

This crisp is vegan and gluten free.  I even made my version oil free by using applesauce in place of coconut oil.  In the recipe, Miryam states that any fruit can be used, not just blueberries.  I can’t wait to try more of the recipes.  They all look so easy!  Next on my list is the lemon coconut bites.  Yum!  I should state, that not all of the recipes are vegan, but many are.

Raspberry Macaroons (Vegan and Gluten Free)

Raspberry Macaroons that are vegan and gluten free.  I am loving all the spring produce!  I picked up some raspberries to make these Raspberry Vegan Macaroons for you guys.

They are super easy to make.  Just a handful of ingredients and no cooking required!  I think this might work with other berries as well.

These Raspberry Macaroons are vegan, gluten free and also paleo approved!  If you liked my 4 ingredient macaroons, then you will love these too.

These take about 5 minutes to whip up.  Then you just need to let them chill in the fridge.  This recipe is also nut free for those that have kids with nut allergies.

I added chocolate chips to mine, but you can omit those if you like.  I just love the flavor combo of raspberry and chocolate.

Coconut Berry Fudge Cups (Vegan)

You guys!  These Coconut Berry Fudge Cups are so good!!  If you like my coconut almond fudge, or my lemon coconut fudge, then you will also love the coconut berry fudge cups.  They best part?  They are super easy and only take 4 ingredients!

Only 2 tablespoons of added sugar in the entire batch.  I made mine in standard sized muffins pans, but you can also do these in mini muffin pans for a bite sized treat.

These little bites of fudge are vegan, gluten free and paleo.  I know it’s kinda early to mention this, but as I was making them, I thought they would be great for Memorial Day or 4th of July parties.

Peach Chia Jam (No Refined Sugar)

Peach Chia Jam.  I made you a chia jam!  Are you seeing the peaches show up at your grocery store?

We are well into summer here in Texas, so I thought I would make some peach chia jam.  It turned out so good.

The best thing about this peach chia jam, is that there is no canning, boiling or pectin involved!  The chia seeds do all the work.  This chia jam is made in the refrigerator.  Super easy!

Another great thing about this jam is that it contains no added sugars.  Peaches are so sweet on their own, so I didn’t feel the need to add anything extra.

However, if you like things a little sweeter, you can probably add a couple teaspoons of maple syrup or raw honey.

This jam needs to be stored in the fridge and it should last a couple weeks.  It’s great on toast, on top of yogurt, or even as a pancake topping!
