Pina Colada Ice Cream

Summer is here and who doesn’t like a frozen treat?  I already have several up in my recipe index.  This pina colada ice cream is just a perfect addition.  The taste of pina colada reminds me of when I lived in Las Vegas.  We would go to the resort pool parties and sip on pina coladas.  Super yummy.  I found this recipe initially at The Midnight Baker’s website.  She made them into popsicles, but I turned them into ice cream.  You could do either.

If you don’t have an ice cream machine, you can make them into popsicles
or smoothie pops.  Any way will work great!  We received a pineapple and some vanilla beans in our co-op basket so I used them in this recipe.

Pina Colada Ice Cream

Pina Colada Ice Cream

Prep Time 15 min Serves 4-5 cups     adjust servings

Ingredients

  • 1 can coconut milk (I used Thai Organic)
  • 1 frozen banana
  • 1 vanilla bean (whole) 1tsp extract would work well too.
  • 3 cups pineapple diced
  • 2 T liquid sweetener (optional)

Instructions

  1. Throw all the ingredients in a blender and blend for about 90 seconds. Take a taste. It will be slightly tart. I liked it that way.
  2. You can also add 2 T of maple syrup or honey to sweeten it more if you like. I did not add any sweetener to mine.
  3. Pour contents into ice pop molds or an ice cream machine . Mine took about 20 minutes in the machine.
  4. The ice cream will come out like soft serve. If you prefer a harder ice cream, place in the freezer for 30 minutes to an hour to firm up. Enjoy!

Blueberries and Cream Popsicles

Here in Texas it’s a steamy one hundred degrees this hot summer day.  So, what do you want most on hot days?  Homemade Blueberries and Cream Popsicles!  Kids love food on a stick and ice cream is no exception.

My kids love it.  But, let’s face it, most store-bought frozen treats are laden with excess sugar and too many chemicals.  Not these Blueberries and Cream Popsicles!

She loves her ice cream!  I love these pop molds too because they have a little tray to catch all the drips.  No mess.  Love that idea!  Well, almost no mess.

She may be messy, but she is so darn cute!  I wanted make this popsicle recipe ever since I saw some Pina Colada Popsicles on The Midnight Baker’s blog.  They looked AMAZING!  I just ran out of pineapple, so I subbed blueberries.  Came out super good, but I am trying her recipe as soon as I get my hands on some pineapple!

Creamy coconut milk and fresh blueberries is always a winning combination!

  1. Pour all ingredients into a blender and blend for about 90 seconds.
  2. Take a taste, if it’s sweet enough, pour into popsicle molds or smoothie pop molds .
  3. If not, feel free to add more maple syrup and blend for a few more seconds.I think I used 2 tablespoons maple syrup total in mine.

If you don’t have pop molds, you can even make it ice cream, using an ice cream machine . All these options are great. I hope you and your family enjoy them as much as we did. There will be more popsicle recipes coming this summer too!

Strawberry Ice Cream

Hooray!  Warm weather is here.  At least, in Texas it is.  So it’s time to start breaking out the ice cream maker.  I already have a Cookie Dough Ice Cream and a 5 Minute Banana Ice Cream on the blog.  Now it’s time to add another: Strawberry Ice Cream. Who doesn’t like strawberry ice cream? I know I love all things ice cream, especially strawberry ice cream.

I use canned coconut milk as a base for all my ice cream recipes for a few reasons.  It has that rich taste and mouth feel of real ice cream and it is dairy free.  I have tried using just nut milk, but it never comes out as creamy.  Since this is so rich tasting, a little bit will satisfy you.  You can use either fresh or frozen strawberries for this.  We used fresh organic strawberries since they were on sale the other day at Whole Foods.  They were so sweet and yummy!  Most store bought ice creams contain carrageenan and other unwanted additives.  The organic stuff is always so expensive.  The ice cream maker is pretty affordable and you make your money back pretty quick.  Plus, you can create your own flavors! 🙂

Prep Time 10 min Serves 4 - 6 servings     adjust servings

Ingredients

Instructions

  1. Mix the coconut milk, vanilla bean and the sweetener in a bowl.
  2. Pour the contents in the ice cream maker. I used my Cuisinart.
  3. When the ice cream starts looking like it is coming together (after about 15 minutes), add the strawberries.
  4. The ice cream will be more of a soft serve consistency. If you like harder ice cream, you can stick it in the freezer for another 1 1/2 hours. That’s it. Enjoy!

5 Minute Banana Ice Cream (Vegan)

This 5 Minute Banana Ice Cream is LIFE CHANGING.  Seriously.  Sometimes you just get a craving for some ice cream.

I make banana ice cream when I get those cravings.  Most store bought ice creams are laden with additives, saturated fat, processed sugar and too many calories.

I have an ice cream maker, but sometimes I forget to put the bowl back in the freezer.  So when I have a sweet craving, I make this super easy vegan banana ice cream.

 

5 Minute Banana Ice Cream

I have a smoothie version of this as well.  My Tropical Smoothie Peanut Paradise is made in a similar way.

The best part of this recipe is that you don’t need an ice cream maker to make this.  I use my vitamix, but I have used a magic bullet in the past as well.

You will be surprised at how decadent this banana ice cream tastes.  You will feel like you are cheating!  Can it get any easier?  I have used this many times to curb a sweet craving.  It really works!

5 Minute Banana Ice Cream

5 Minute Banana Ice Cream

Prep Time 5 min Serves 1 serving     adjust servings

This stuff is so rich and delicious, it feels like you are eating real ice cream!

Ingredients

  • 2 peeled and frozen bananas
  • 2 T almond or peanut butter
  • 2 T almond milk
  • optional add ins: nuts, chocolate chips, fruit, coconut, cocoa powder

Instructions

  1. In a blender, , mix the bananas and the milk. You may need to cut the banana into chunks depending on how powerful your blender is.
  2. Once they are partly chopped up, add in the nut butter.
  3. Continue to blend until you get a soft serve consistency.

You may not even need to add the milk at all, but I think it helps blend everything easier. Spoon ice cream into a bowl and stir in any additional ingredients you desire. That’s it!
