Nutella Overnight Oats

So the other day I made a batch of my Homemade Nutella.  I had this recipe in mind when I made it.  So now I am sharing these Nutella Overnight Oats with you!

This recipe is just as easy as all the others.  So good!  I didn’t even add any extra sweetener to mine because the Homemade Nutella is already sweet.  If you like things a little sweeter, I will put an option in the ingredient list.

  1. Combine all the ingredients in a jar and mix well.
  2. Store covered in the fridge overnight.

I make 5 at a time so I have easy breakfasts all week. I eat mine cold, but if you like yours warm, feel free to heat it up. Either way works. Enjoy!

Almond Butter Chocolate Overnight Oats

This Almond Butter Chocolate Overnight Oats is the ultimate indulgence in your daily breakfast.  The best part?  It’s totally healthy!

Yes that’s right. This healthy breakfast is made with good for you ingredients like almond butter, cacao powder and steel cut oats.

This is one of the easiest breakfasts you can make yourself.  I make 5 at a time and eat them all week.  My husband even takes them to work with him.  They travel very well.  Between the chia seeds and the cacao powder, you are getting a lot of antioxidants.

Also a lot of protein and fiber!  This will keep you full until lunchtime.   If you don’t know what cacao powder is, it is chocolate in it’s most raw form.

It can be bitter, but it’s so good for you.  I usually put a chopped medjool date in my oatmeal and it turns into a caramel overnight.  It gives just a hint of sweetness.  You can also use maple syrup.

My recipe makes a thicker oatmeal. If you like yours thinner, just add a bit more milk. Take out in the morning and enjoy. I eat mine cold right out of the fridge. You can also try my Overnight Oats in a Jar.

Almond Joy Granola Recipe

Almond Joy Granola.  I have been slightly obsessed with coconut lately if you haven’t noticed.  You need to try this Almond Joy Granola!   What’s not to love?  I was not always a coconut fan, but have grown to love it in so many ways.

I already have Almond Joy Energy Bites and Almond Joy Waffles, so why not create Almond Joy Granola.  I have combined my love for coconut, with my love for granola to make this very tasty little snack.  This almond joy granola is a must try!

This is so good!  It may just be my new favorite.  I have to admit, though, this recipe was not going to be granola.  I was trying to do a baked oatmeal and when I went to pull them out of the muffin tins, they just fell apart.

But rather than toss it, I just threw it back in the oven for another 15 minutes and made it granola!  Glad I did too, because the coconut got toasty and sweet.  Yum!

Prep Time 10 min Cook Time 15 min Serves 2.5 cups     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl . Mix wet into another.
  3. Add wet to dry and mix until combined.
  4. Spread mixture onto a lined baking sheet .
  5. Bake in the oven for 17 minutes.
  6. Pull out and shake granola around and put back in the oven for another 15-17 minutes. Enjoy!

Almond Butter Chocolate Chip Baked Oatmeal

Almond Butter Chocolate Chip Baked Oatmeal.  I made you some baked oatmeal!  I just love oats.  They are much more satisfying than a bowl of cold cereal.

Since this healthy baked oatmeal recipe is very high in fiber, it will keep you full for a long time afterward.  Lately, I have been doing a few baked oatmeal dishes which have become my new favorite way to eat oats.

First, I did the Apple Cinnamon Baked Oatmeal.  Then the Strawberry Banana Baked Oatmeal.  Now this latest recipe.

This is my new favorite, because, let’s face it, almond butter makes everything better!  Throw in some chocolate chips and you have yourself a pretty heavenly little breakfast.

High protein too.  These would be especially decadent if you topped them with my Sweet Peanut Butter Spread.

Almond Butter Chocolate Chip Baked Oatmeal

Prep Time 10 min Cook Time 15 min Serves 6 muffins     adjust servings

Ingredients

  • 2 cups gluten free rolled oats
  • 1/3 cup almond butter
  • 2 ripe bananas smashed (you can also use 1/2 cup applesauce or plain yogurt)
  • 3 T maple syrup
  • 1 tsp vanilla extract
  • 2-3 T almond milk
  • 1/4 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350F
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet into another.
  4. Add wet to dry and mix well.
  5. Grease a muffin tin and spoon batter into each cup until it is about 3/4 full.
  6. Bake in the oven for 15-18 minutes.

I used a jumbo muffin pan and got three of them out of this batch. If you use regular size muffin cups, you will probably get about 6.

Blueberry Oatmeal Waffles (Vegan)

Blueberry Oatmeal Waffles. So I got this waffle iron about a month ago.  My first few attempts at healthy waffles were epic fails.  Today I finally came out with a winning recipe!

These blueberry oatmeal waffles came out great!  My kids really enjoyed having these blueberry oatmeal waffles.  I hope you enjoy them too!

I got some organic blueberries from Sprouts yesterday and they were so good!  Blueberries are on the “dirty list, so I only buy them organic and in season.  I haven’t had them in months.  When I saw them sitting there, I had to snatch up a couple pints.

So glad I did because they were sweet and juicy!  We got some yummy strawberries too.  So good!  Waffles and pancakes are super easy to whip up fast.  I actually mix the dry ingredients the night before, so it takes just a minute or two to add the wet in the morning.

Blueberry Oatmeal Waffles

Blueberry Oatmeal Waffles

Ingredients

  • 3/4 cup oat flour
  • 1/2 cup spelt flour
  • 1 1/2 cups milk (I used almond milk)
  • 1/2 cup rolled oats
  • 2 tsp baking powder
  • 1 T maple syrup
  • 2 T coconut oil
  • 1 egg (I used a flax egg replacer)
  • 1/3 cup shredded coconut
  • 3/4 cup blueberries (I used fresh)

Instructions

  1. Preheat the waffle iron.
  2. Mix all the dry ingredients together in one bowl.
  3. Mix wet in another.
  4. Add wet to dry and mix well.
  5. Fold in blueberries.
  6. Spray the waffle iron with oil before spooning batter on each time.
  7. I used a 1/2 cup measuring cup to scoop the batter onto the waffle iron.

I got 4 large waffles out of my batch. If you have leftovers, you can freeze them in a plastic container with parchment in between each waffle.

Healthy Oatmeal Cookies!

I made you healthy oatmeal cookies! Just because I try to eat healthy doesn’t mean I stopped loving cookies. One of my favorite recipes before I started eating healthy was my grandmother’s oatmeal chocolate chip cookies. The original recipe called for processed flours and processed sugars.  These healthy oatmeal cookies are much better for you.  So have a couple. 🙂

I loaded mine up with spices so that I would need to add very little sugar.  Did you know that spices like cinnamon, nutmeg and vanilla make foods appear sweeter than they are.  It’s like a trick of the senses or something.

  3. Mix dry in another.
  4. Add wet to dry.
  5. Fold in chips.
  6. Bake on a lined baking sheet or greased pan for about 13-15 minutes or until edges come out lightly browned.
  7. These are so good that I eat at least 3 of them when they first come out of the oven. So does Meadow.
