Chard Wraps with Apple Slaw.  The other day my husband bought a bag of apples because they were on sale.  It was perfect because I have been wanting to do an apple slaw.

I normally make a crock pot applesauce.  What better way to enjoy the apple slaw than a in a chard wrap?  These lettuce wraps with apple slaw are the perfect healthy dish to kick off the new year with.

The tahini dressing really makes this apple slaw stand out.  In fact, I use it as a dressing for salads as well.  I love lettuce wraps because they fit into every diet.  Gluten free, grain free, vegan and raw.

I did a small juice fast the other day, and this immune boosting juice was one that I made during that juice fast. You may think, wait a minute. Juice a sweet potato? Trust me. They make for some yummy juice. Maple Glazed Brussel Sprouts

I am not too picky when it comes to vegetables, but the one I never seemed to like was brussel sprouts.  I had tried them many ways with no luck.  So when my friend Judith over at The Midnight Baker told me she had a great recipe, I decided to give them another shot.  This Maple Glazed Brussel Sprouts recipe was so good that I could not stop eating them.  I am a believer for sure now.

These are amazing.  Even my husband could not stop eating them.  This will become a staple in our house for sure.  This recipe is almost as addicting as my Cauliflower Popcorn.

Maple Glazed Brussel Sprouts

Prep Time 5 min Cook Time 30 min

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Wash brussel sprouts, remove the ends and cut in half.
  3. Place the brussel sprouts in a large bowl.
  4. In a small bowl, whisk the oil, salt and maple syrup.
  5. Pour over the brussel sprouts and mix well.
  6. Place the brussel sprouts on a lined baking sheet.
  7. Bake in the oven for 30 minutes, stopping to flip the sprouts halfway through.

No Bake Gingerbread Cookies that are vegan, gluten free and paleo.   As Thanksgiving comes closer, it’s time to think about gingerbread everything.

I am sure everyone is starting to get sick of all things pumpkin these days.  I have been wanting to make these no bake vegan gingerbread cookies for a while now and I’m so glad I did.  They are AMAZING!

These delicious no bake vegan gingerbread cookies are seriously easy to make.  This is a cookie batter that’s safe to eat. These no bake paleo gingerbread cookies are also gluten free, grain free and vegan.  Can it get any better?

Chocolate Peppermint Truffles.  This time of year makes me think of chocolate.  So how about some chocolate peppermint truffles?  Truffles, cookies, brownies to name a few.  It seems like there are always sweet treats going around at parties.

I have been trying to come up with cleaner versions.  This chocolate peppermint truffle recipe is another one of those.  Only 4 ingredients and just a few minutes!

I got the idea for these peppermint truffles after making my Chocolate Pistachio Truffles.  These healthy truffles are so good and they just melt in your mouth.

The best part?  They can literally be made in minutes!  I used to think truffles were hard to make, but this recipe proved me wrong.  It couldn’t be easier.
