Healthy Kidney Bean Pasta

We went to Disney World a few weeks ago.  Before we left, Marcus made this delicious Healthy Kidney Bean Pasta to help use up some of the stuff in the pantry.  I am not really a pasta person myself, but I thought this was awesome!  We used gluten free brown rice pasta, but I am sure any pasta will work. Red Pepper Eggplant Pasta

My husband Marcus is very good at whipping up meals with whatever we have on hand.  The other day he made this Red Pepper Eggplant Pasta, but didn’t measure any of the ingredients.  So he made it a second time and measured everything out so we could share it with you guys.  Some of Marcus’s creations have ended up being the most popular recipes on my site.  A few examples are the Sweet Potato Chili and the Peanut Noodle Stir Fry.

Sweet Potato Coconut Curry

Out of all the veggie pasta out there, sweet potato pasta is my fave!  I love that you can eat a large portion and not feel guilty! I was never really into regular pasta that much, so I am loving all these veggie pastas.  In this Sweet Potato Coconut Curry the flavors work in a magical way.  I seriously could have eaten it all myself, but I had to save some for Marcus!

This dish is super easy to make!  I used my spiralizer to make the sweet potato pasta.  It only takes a few minutes, but it is an arm workout!  This recipe fits all diets too.  Vegan, gluten free and paleo.  If you want to add more protein to this, you can always add your favorite protein.  I added some pepitas to mine.

Soba and Zucchini Noodle Bowl

You guys!  I am here to tell you about my friend Ivy’s new ebook coming out.  It’s called Clean Cuisine Dinners – A Full Month of Delicious Doable Dinners and Weekly Shopping Lists.  If you are not familiar with Ivy and Clean Cuisine, I urge you to check out her awesome website as well.  Ivy was diagnosed with MS in her 20s and is keeping herself healthy with real food.  You can read her story here.  If you are new to clean eating or a whole food life in general, I highly recommend this book.  It’s got everything you need to get started.  In the book, Ivy plans out a month of healthy meals + shopping lists, so all you have to do is prepare the food. She has most of the work for you! There is a section on frequently asked questions, clean eating defined, and the recipes are clearly marked on whether they are vegan, vegetarian or gluten free.  Not all the recipes are vegan, but they can definitely be altered to be that way. The Soba and Zucchini Noodle Bowl I am sharing is totally vegan and it was one of the most delicious meals I have had in awhile.  In fact, Marcus ate almost the entire thing in one sitting! A few of the other meals I am looking forward to making are the Bean and Chipotle Chili and the Roasted Veggies with Creamy Lime Hemp Dressing. The original recipe called for roasting the tomatoes, (which I am sure makes this even more delicious), but I was pressed for time, so I skipped that step. I will write the directions from the book if you care to make it the way it was written. Creamy Mushroom Zucchini Pasta

Sometimes the greatest meals come about when you are trying to use up leftovers.  That is exactly what happened with this Creamy Mushroom Zucchini Pasta.  Have you tried zucchini pasta?  It’s so good and much lower in carbs.  I use my Spiralizer to make my zucchini pasta.  I just love that thing!  You can make pasta out of all kinds of veggies.  I have made pasta from sweet potatoes, beets and cucumbers so far.  So good!

I went a little overboard on the sauce with mine. 🙂  However, I decreased it in the recipe, so you shouldn’t have the same issue.  Either way this is delish!  This is a super easy recipe that only takes a few minutes to make.  If you wanted to boost the protein, you can add in whatever protein you like.

Sweet Potato Pasta with Brussel Sprouts

I just love my spiralizer. Today I made Sweet Potato Pasta with Brussel Sprouts and Pistachios.  This sweet potato pasta is super easy to make.  Great for those days when you need to pull something together quickly.  The flavors in this dish were inspired by my maple glazed Brussel sprouts.  Since sweet potatoes and Brussel sprouts are my favorite vegetables, I had to put them together.

This sweet potato pasta with Brussel sprouts fits almost every diet.  It’s vegan, gluten free and paleo.  Grain free too.  The pistachios add a little crunch as well as some protein.  I also think this sweet potato pasta would be great with a cashew cream instead of the maple glaze.  I may try that next time.  Dried cranberries or even pomegranate would be a nice addition as well.   If you needed a nut free version, you can easily use pepitas instead of pistachios.
