Sweet Potato Pizza Crust

Omg this sweet potato crust is amazing!  The other day I came across this recipe.  It was on a blog called Breast Cancer Maven.  Check it out sometime.  She originally found the recipe on Blissful Basil’s website.  Check that blog out too.  Beautiful photos and great recipes.   I love sweet potato anything, so I knew I had to try it.  I made a few alterations to my recipe.  You have got to try this healthy sweet potato pizza crust!

The topping possibilities are endless.  I think my cashew pizza cheese would be excellent on this.  If I had any left, I would have used it.  I decided to top mine with spinach and avocado.  Next time I am definitely using the cashew cheese sauce!  This crust is so great.  It’s super crispy just how I like it.  The original recipe called for roasting the garlic and sweet potato.  I boiled my sweet potatoes, so I just used minced garlic.  You can most certainly roast the garlic and sweet potatoes if you prefer.  I also think this would be great with tomato sauce.

Rustic Vegan Pizza

I just love pizza.  Lately, I have been using Ezekiel sprouted wheat tortillas for my crust.  Today, I decided to try my hand at homemade whole wheat crust.  Mostly, because I was not in the mood to go to the store to get more tortillas.  I am glad I did because the pizza came out amazing!  I chose mushroom and spinach because those are my favorite pizza toppings.

So, being vegan and all, I had to find a way to make a good pizza with out cheese.  I mean, I could do the vegan cheese, but it is far too processed for my liking.  So to get around that, I decided to make a “cheese” out of caramelized onions.

Rustic Vegan Pizza

Serves 1 pizza     adjust servings

Ingredients

    For the crust

    • 2 cups whole wheat flour
    • 1 pkg yeast
    • 2 T oil (I used almond oil, but your could use coconut or grapeseed oil too)
    • 1 T raw honey or maple syrup
    • 1 cup hot water
    • 1 tsp salt

    For the toppings

    • 2 yellow onions
    • 1 cup mushrooms sliced thin
    • 2 cups spinach
    • 2 T oil (I used almond oil)
    • salt to taste

    Instructions

      For the crust

      1. Mix the dry ingredients and stir.
      2. Then add the wet.
      3. Mix with your hands until you get a nice dough formed.
      4. Cover and place in a warm spot for about 20 minutes.
      5. Preheat oven to 425.
      6. On a floured surface, roll out dough.
      7. Place dough on a floured pizza stone and brush top with oil.
      8. Bake for about 10 minutes.

      For the toppings:

      1. Sweat the onions in a covered pan with the oil and salt on medium heat until they look caramelized.
      2. Add the onions to the pizza dough to create a cheese layer.
      3. Once the onions are evenly spread out, add the mushroom and the spinach.
      4. Place back in the oven for 10 minutes.
      5. Serve immediately or refrigerate for later.

      I know that life moves fast and a lot of time you don’t have the time to whip up an elaborate dinner.  Instead of ordering a pizza, try making your own flat bread one.  It’s super easy.

      When I was in high school, I worked at a pizza restaurant.  They used to let us make a small pizza to take home after our shift.  We used to get creative with the toppings.  I think I made a steak and cheese pizza once.  On slow nights we used to make fried dough.  It was fun and yummy.  Probably not too healthy though. 🙂  Now, every time I smell takeout, it reminds me of that time.

      Quick Flat Bread Pizza

      Ingredients

        For the pizza

        • Whole grain flat bread
        • 10-12 cherry tomatoes
        • 1/2 cup mushrooms
        • 1 bunch baby spinach
        • 1/4 cup daiya cheese

        Pesto Sauce

        • 1 cup fresh basil
        • 1 cup fresh parsley
        • 1/2 cup almonds (I use almonds because pine nuts are so expensive)
        • 3-4 garlic cloves rough chopped
        • 2 T nutritional yeast
        • 1/4 cup olive oil

        Instructions

          Pesto Sauce:

          1. Grind the almonds up a bit in the food processor first.
          2. Then add the basil, parsley, nutritional yeast and garlic.
          3. As you process those, drizzle in the oil until everything is well mixed.

          For the pizza

          1. Preheat oven to 350.
          2. Take the whole grain flat bread and brush it with oil and bake it for about 7 minutes.
          3. Pull the flat bread out and spread on the pesto sauce, add the mushrooms, spinach and tomato and cheese and bake for another 10 minutes or until the flat bread looks crispy.
          4. Cut up and enjoy!
