I knew the recipe was going to be good, when I felt the urge to eat the batter with a spoon!  Seriously!  You need to try these blondies asap.

They are super easy to make, and they come with a boost of protein and fiber. 🙂  I’d venture to say they are healthy enough for breakfast. 🙂

Raspberry Macaroons (Vegan and Gluten Free)

Raspberry Macaroons that are vegan and gluten free.  I am loving all the spring produce!  I picked up some raspberries to make these Raspberry Vegan Macaroons for you guys.

They are super easy to make.  Just a handful of ingredients and no cooking required!  I think this might work with other berries as well.

These take about 5 minutes to whip up.  Then you just need to let them chill in the fridge.  This recipe is also nut free for those that have kids with nut allergies.

I added chocolate chips to mine, but you can omit those if you like.  I just love the flavor combo of raspberry and chocolate.

New overnight oats recipe today!  This time it’s Raspberry Cream Overnight Oats.  I had some leftover cashew cream from making my No Bake Oatmeal Pies, so I used it to make these Raspberry Cream Overnight Oats.  You guys!  This one is delicious!  If you like the creamy factor of my Cinnamon Roll Overnight Oats, then you will love this new overnight oats recipe!

If you haven’t tried overnight oats, this is a great recipe to start with.  This is seriously the easiest breakfast you will ever make.  No cooking required!  Make 5 at a time for easy breakfasts all week.  You can heat them up, or eat them cold.  I make mine with steel cut oats and I prefer them cold.  They remind me of cereal.

Pumpkin Raspberry Oat Bars (Vegan)

Pumpkin Raspberry Oat Bars.  Wow these are so good!  The other day, I came across this recipe in the Facebook recipe group I run.

The original recipe has much more oil than I typically use.  It’s also not gluten free.  So I made my Pumpkin Raspberry Oat Bars gluten free with 1/4 of the oil.

I also changed a few other things.  The recipe came out fabulous!  You can custom create your own flavors by changing up the jam.

I used some raspberry chia jam for my filling, but any jam would do well.

Once again this is a recipe I used sorghum flour in.  I like it’s cakey texture and I thought oat flour with rolled oats might be too much oat flavor.

Feel free to use gluten free oat flour if you like.  I am sure it will work great too.   These bars are gluten free and vegan.

If you are not a fan of pumpkin, you could probably use sweet potato or butternut squash puree as well.  Applesauce may be another option for you.
