Healthy Turmeric Cauliflower Rice

You have to try this Healthy Turmeric Cauliflower Rice!  Have you heard about the benefits of turmeric? Turmeric is anti-inflammatory, can increase antioxidants, and lowers your risk for heart disease to name a few.

Cauliflower rice can be a great alternative for those trying to eat a low-carb diet.  It’s very low in calories as well. I don’t even really like cauliflower, but I do enjoy cauliflower rice. It’s super easy to make too.  So is this healthy recipe.

This recipe is vegan, gluten free and paleo approved.  You can turn it into a main dish by adding some vegetables and your favorite protein.  I think carrots and peppers would go really well with the flavors.  For protein, I would suggest chickpeas or tofu if you eat soy. It’s very versatile!

Red Beans and Rice

For those of you that may not know, my husband Marcus helps out with a lot of the savory cooking.  This red beans and rice recipe is one of his creations.  He came up with this while trying to use up some odds and ends we had in the fridge.  This recipe is very easy and also budget friendly!

Fall Rice Bowl

I am loving that fall is here.  Cooler air and all the yummy fall produce!  Squash is my favorite seasonal vegetable.  It went so well in this Fall Rice Bowl.  Then again, squash goes so well in just about anything!  Sweet or savory.  I used butternut squash, but I also think kabocha squash would work nicely.

If you don’t eat rice, this can also be made with quinoa.  I chose wild rice because I think the earthy flavor goes so well with the squash. I think kale or even mushrooms might be other nice additions.

Thai Coconut Rice

My husband comes up with a lot of the savory recipes on this blog.  This Thai Coconut Rice is one of his creations.  He loved it so much that he declared, “This ranks right up there with the Peanut Noodle Stir Fry!”  If you have made that recipe, then you know that is a high compliment.  He made this a little spicy, but you can certainly omit the jalapeno pepper if you don’t want the heat. Some of the other recipes he has made are Homemade Sriracha and Sweet Potato Chili.

Mexican Rice

My husband is the spicy food lover in this family.  This Mexican Rice is his recipe.  He made it the other day when he was trying to use up all the food in the fridge.  That first time he didn’t measure anything.  It was so good that he had to re-create it with measurements so he could share it with all of you.  Some of his other recipe creations are the Peanut Noodle Stir Fry and the Sweet Potato Chili.  Also the Pumpkin Enchiladas. Potato and Green Pea Masala

Do you like Indian food?  About 13 years ago, I used to work at this job with an older Indian woman named Anna.  She was a vegetarian just like I was. She used to bring her lunch every day and would often share it with me.  I think she felt bad for me because I would often bring canned food for my lunch.  I wasn’t much of a cook in my early twenties and I often relied on Amy’s soups and chili.  Anyway, her lunches were always so good and this Potato and Green Pea Masala reminds me of her.
