Edamame Black Eyed Pea Citrus Salad

I have a new salad recipe for you! Edamame Black Eyed Pea Citrus Salad.  Last week my husband and I went to Disney World to celebrate 10 years together.  For more vegan ideas at Disney, you can also check out this post.

We had dinner at Boma in Animal Kingdom one night.  I highly recommend!  This healthy salad recipe was inspired by one that we were served there.

 

Edamame Black Eyed Pea Citrus Salad

 

This salad comes together very quickly and would be great for a party. I think it’s best if you can let it marinate for 30 minutes before serving.  That gives it time for the flavors to marinate.

If you like my Texas Caviar, I think you should give this a try too!  If you don’t want to use edamame, green peas may also work.

Curry Chickpea Cous Cous (Vegan)

We eat at Whole Foods often, and this new recipe is a copycat version of the Curry Chickpea Cous Cous from the Whole Foods salad bar.

I have several other copycat versions from the whole food salad bar.  Two of my other favorites are the carrot ginger detox salad and the kale apple salad.

I used Israeli cous cous to keep the recipe true to the whole foods version.  I know cous cous is not gluten free, but I really do think buckwheat or quinoa could be used in place of the cous cous if you wanted to keep the recipe gluten free.

However, keep in mind that buckwheat will take longer to cook than the cous cous will.

We ate this cold like a salad, but you can most definitely warm it up if you prefer.  It’s simple to make too.

Mango and Black Bean Quinoa Salad

Summer is not totally over yet, so I am making you a Mango and Black Bean Quinoa Salad. I just love salads.

Last month when I went home to Boston, my stepmom made this awesome pasta salad with mangoes, black beans, corn, pasta, cilantro and lime.  I really enjoyed it, so I decided to come home and make a twist on that recipe. I used quinoa in place of the pasta, since I am not a huge pasta fan.  I think this came out really good!

This would be perfect for parties and it’s also very easy to make.  This Mango and Black Bean Quinoa Salad is vegan and gluten free. I highly recommend topping it with avocado.  So good!

Apple Vinaigrette Dressing (Oil Free)

I made you a new healthy dressing recipe.  This time it’s Apple Vinaigrette Dressing. I just love salads.  I could eat them everyday.  I am always trying to switch up my salad dressings to keep things fresh and new.

When we went to Disney in October, we had an amazing apple vinaigrette dressing at Boma in Animal Kingdom Lodge. If you haven’t been there, definitely put it on your list!  Very vegan friendly.

That recipe inspired me to create this healthy vinaigrette dressing.  Unlike most salad dressing recipes, mine contains no oil.  You can also whip it up in minutes!

You only need a small amount of ingredients to make it too.  Vegan, gluten free and paleo approved. It’s also oil free!

This is a great way to use up apples in the fridge.
