Fresh Corn and Mango Salad (Vegan)

Now that the warm weather is here, I am all about salads.  This Fresh Corn and Mango Salad is so refreshing.  The recipe comes from Heather Christo’s new book Pure Delicious – More than 150 Delectable Allergen-Free Recipes.

My daughter has tree nut allergies, so I love that this book is full of things she can eat!  We took the corn salad to a family gathering yesterday and it was a hit.  I also added avocado, because avocado makes everything better, right?

I have had 2 big bags of green lentils I needed to use up.  So today was the day to make this Lentil Spinach Salad with Avocado.  Avocado makes everything better, doesn’t it?  This lentil salad came out really good and it’s easy to make.  Budget friendly too.  If you like lentils too, you may also like my lentil sloppy joes and my lentil loaf.

This makes a lot.  About 4-5 servings.  I think it is better the next day after the flavors have had time to marinate.  It’s a great dish for a crowd.  If you are new to lentils, this is the perfect dish to start with.

This salad would be great for parties.  It’s vegan and gluten free.  Super healthy and tasty. This recipe calls for removing the stems from the kale.  Don’t throw them away.  You can save them for juicing or homemade vegetable broth.

Avocados with Mango Salsa (Vegan)

You guys!  These Avocados with Mango Salsa might just be the most delicious things I have ever eaten.  That is saying a lot!!

You all know I love avocado recipes, so I know this would be a winner.  If you like my Pineapple Mango Salsa, then you will love this too.  It’s the perfect dish for summer. No cooking required!

This recipe fits all diets.  It’s gluten free, vegan and even paleo.  If you wanted to add some extra protein, I think black beans would go well in here also.

Or even quinoa.  I thought they were just perfect this way. I am a wimp with spicy food, but if you like things spicy, you can also add jalapenos.  My husband would love that!

Asian Chopped Salad (Vegan, Gluten Free)

Asian Chopped Salad.  I just love salads of all kinds.  I eat them all year long.  My husband made this Asian Chopped Salad this weekend and it was a huge hit.  I can see it going in our regular rotation.

This recipe makes a lot, so it would be great for parties.  For the dressing, he slightly tweaked our Thai Peanut Sauce recipe and it came out great!

If you are avoiding soy, you can use green peas instead of the edamame.  I also think toasting the cashews would give them an extra punch of flavor.  This salad is vegan and gluten free.
