Chunky Vegetable Soup

Fall is coming and I am going to start posting more soup recipes.  Starting with this Chunky Vegetable Soup.  I made this in the slow cooker and it couldn’t have been easier!

I used the slow cooker instead of the pressure cooker because this makes a big batch.  I didn’t think I could fit the whole thing in my pressure cooker.

I love using the slow cooker because the soup can cook even while you are not home.  In fact, when we made this, we left the house for most of the day and came home to a delicious smell.  It was making my mouth water.

As it’s written, this healthy soup recipe is vegan, gluten free, paleo and oil free.  If you wanted to make it more hearty, I think adding kidney beans or brown lentils may be nice additions.

Slow Cooker Apple Butter

Slow Cooker Apple Butter.  I had about 8 apples to use up in the fridge, so I decided to attempt some slow cooker apple butter. I was so glad I did.  Not only was it super easy to make, but it let me use up all those bruised apples!

I added a little bit of sweetener to my apples because I wanted to make sure this was very different than my slow cooker applesauce.

I thought the small amount of sugar would help give it a thicker texture once cooked down.  I really do think it helped, but next time I am going to try it with no sugar at all and see how it turns out.

I know some of you are probably wondering if you can make this in the Instant Pot.  I did find this recipe online if you want to try it.

This wonderful apple butter will make your house smell amazing as it cooks!  It’s perfect to use as a spread or even as a dip. The possibilities are endless.

I plan on using this apple butter in an upcoming recipe too!

3 Bean Vegetable Soup (Vegan, Gluten Free)

It’s been freezing here in Dallas.  The perfect time to make this 3 Bean Vegetable Soup.  This soup is easy to make, and budget friendly too!

I made mine in the Instant Pot, so it only took 30 minutes.  Seriously!  It’s the best gadget ever.  I know not everyone has an instant pot, so I will write directions to make this is in the slow cooker as well.

Caramel Apple Oatmeal (Vegan and Gluten Free)

Caramel Apple Oatmeal is the recipe for today.  If you have been following this blog for awhile, you know I am a huge fan of oats.  Overnight Oats, Oatmeal Cookies, Slow Cooker Oatmeal or Energy Bites made with oats.

This slow cooker healthy oatmeal is not only easy, but it tastes awesome too.  If anyone tries it in the Instant Pot, please let me know the results in the comments section of this post.

This no fuss healthy oatmeal recipe is gluten free and vegan.  Cinnamon apples and oats, with a delicious caramel sauce.  You can use either almond milk or water for the oats.

I chose water for these.  This recipe makes a ton, so you will have healthy breakfast all week long. 🙂
