2 Ingredient Almond Butter Cookies

The other day, I attempted to make a caramel almond butter, but had some difficulty with my blender.  So I turned the recipe into these 2 Ingredient Almond Butter Cookies.  They are delish!

This healthy cookie recipe contains ZERO added sugar.  They are even healthy enough for breakfast.  Yay!

2 Ingredient Almond Butter Cookies

This recipe happened by accident.  I was trying to make a caramel almond butter, but the whole mixture seized in the blender.  So I decided to change it up and make these no bake cookies instead.  I think they came out great.

If you love dates stuffed with almond butter, then this recipe is right up your alley.  It’s vegan, gluten free, grain free AND paleo.  I used salted almond butter in my recipe.  If you use unsalted, you may want to add some sea salt to the recipe.  I love the sweet and salty combo.

Coconut Pecan Cookies

New cookie recipe for you today.  Originally, I set out to make cowboy cookies.  Then after I had them in the oven, I realized I forgot to add the chocolate chips and oats.  Oops!  Even without those 2 things, these coconut pecan cookies still came out very yummy.  They almost reminded me of the flavors in pecan sandies.  In any case, these flourless cookies were delicious.

My husband is a huge fan of carrot cake.  I have already made some carrot cake larabars and also a carrot cake baked oatmeal, but I decided to try some Frosted Carrot Cake Bars.  I don’t even like carrot cake, but I thought these came out really good!  They are so easy to make too.  No cooking required!

Paleo Magic Bars

Do you like magic bars?  I made Paleo Magic Bars for you!   These Paleo Magic Bars are also vegan and gluten free.   The other day on my Facebook page, I asked about holiday treats.  A lot of people mentioned magic bars.  I had actually never even heard of magic bars before.  So I had to look them up.  The original magic bars are loaded with processed ingredients.  Well I knew I could  find a way to clean them up a bit.

What is a magic bar you ask?  It’s basically a graham cracker crust, with a caramel in the middle and then it’s topped with coconut, chocolate chips and nuts.  I used a pecan crust since graham crackers are not exactly a whole food.  I made a cleaner version of it for you.  I must say that even though my recipe is less processed, it is still indulgent and should be eaten in small amounts.  It is very rich.  My husband called these bars, the gift that keeps on giving.  Lol.  I guess he liked them. 😉

Homemade Cookie Butter

I made you some homemade cookie butter?  Have you tried cookie butter?  It’s traditionally made from Biscoff cookies.  I have never actually had the store bought version of cookie butter.  Mostly because I am afraid I would eat the entire jar in one sitting!  The store bought cookie butter also does not have a clean ingredient list.  So I sought out to make some homemade cookie butter.  This stuff is awesome!!

I had to find something to mimic the buttery texture of the Biscoff cookies, so I chose cashews.  I have used cashews as a base in many of my flourless cookie recipes and it’s worked out great.  So I knew they would be great here.  This homemade cookie butter is vegan, gluten free and paleo approved.  It contains no refined sugars.  I am thinking about using it in some upcoming dessert recipes.  Maybe truffles.  I also had some with my 5 minute banana ice cream today and it was amazing!
