Cheesy Zucchini Chips Recipe

I love making all kinds of veggie chips.  Sweet potato chips and zucchini chips are my fave.  Well this recipe for Cheesy Zucchini Chips will definitely be a new fave.

They are delicious, easy to make and dairy free!

I call them cheesy chips, but there is actually no cheese in the recipe!  I used nutritional yeast, which has a cheesy flavor.  It went so well with these chips.

In case you were wondering, nutritional yeast is nothing like bread yeast.  You can read more about it here.  If you eat dairy, you can use some regular cheese if you like.

This can also probably be done in the dehydrator as well.  It might take about 12 hours to do that though.

Soba and Zucchini Noodle Bowl

You guys!  I am here to tell you about my friend Ivy’s new ebook coming out.  It’s called Clean Cuisine Dinners – A Full Month of Delicious Doable Dinners and Weekly Shopping Lists.  If you are not familiar with Ivy and Clean Cuisine, I urge you to check out her awesome website as well.  Ivy was diagnosed with MS in her 20s and is keeping herself healthy with real food.  You can read her story here.  If you are new to clean eating or a whole food life in general, I highly recommend this book.  It’s got everything you need to get started.  In the book, Ivy plans out a month of healthy meals + shopping lists, so all you have to do is prepare the food. There is a section on frequently asked questions, clean eating defined, and the recipes are clearly marked on whether they are vegan, vegetarian or gluten free.  Not all the recipes are vegan, but they can definitely be altered to be that way. The Soba and Zucchini Noodle Bowl I am sharing is totally vegan and it was one of the most delicious meals I have had in awhile.  In fact, Marcus ate almost the entire thing in one sitting! A few of the other meals I am looking forward to making are the Bean and Chipotle Chili and the Roasted Veggies with Creamy Lime Hemp Dressing. The original recipe called for roasting the tomatoes, (which I am sure makes this even more delicious), but I was pressed for time, so I skipped that step. I will write the directions from the book if you care to make it the way it was written. Zucchini Chocolate Chip Cookies (Vegan)

Zucchini Chocolate Chip Cookies.  My 4 1/2 year old is pretty picky when it comes to cooked veggies. She loves raw veggies, but I am always looking for more ways to sneak cooked veggies in.

That is where these zucchini chocolate chip cookies come in.  She loved these zucchini cookies so much.  She had no idea there was a hidden serving of veggies inside.

In fact, she kept trying to sneak more off the baking rack while they were cooling.  If you like this recipe, you may also like my chocolate zucchini muffins and my zucchini chips.

These zucchini cookies are vegan and gluten free.  They can be made in under 20 minutes!  Can it get better than that?  I added chocolate chips to my cookies because everything is better with a little chocolate right? 🙂

Vegan Zucchini Boats

I finally got on the stuffed zucchini train and made these vegan zucchini boats.  You can never have too many zucchini recipes right?  Especially when they are healthy zucchini recipes.  These vegan zucchini boats are super easy to make and only contain simple ingredients that you already have in your house.  I love recipes like that, don’t you?

Some foods are really hard to photograph.  This is one of them.  Even though the picture isn’t great, I promise the recipes is delicious.  I am slightly obsessed with sun-dried tomatoes these days.  In my opinion, the sun-dried tomatoes are what really makes this recipe delicious.  Every other bite you get the sweetness of the tomatoes.  It pairs very well with the onions and garlic.  Since I made this recipe with quinoa, it can be a complete vegan meal.
