Healthy Pumpkin Chocolate Chip Muffins!

Ingredients

  • 2 1/2 cups spelt flour (I think oat flour would work too)
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup unsweetened applesauce
  • 1 can or 2 cups pumpkin
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/3 cup chocolate chips (I used carob)

Instructions

  1. Preheat oven to 350. 
  2. Mix wet in one bowl.
  3. Mix dry in another.
  4. Add wet to dry and mix until combined.  
  5. Spoon into muffin tins. 
  6. Bake for around 12-15 minutes or until toothpick comes out clean.
