Quinoa Pine Nut and Chocolate Chip Cookies

I love quinoa.  Up until now, I have always used it in savory recipes.  I had heard of people making cookies with it, so I wanted to try.  This is my first attempt and I think these quinoa pine nut and chocolate chip cookies came out pretty good. The earthiness of the pine nuts and the sweet bitterness of the chocolate combine really well with the sweetness of the dough. This chocolate chip cookie recipe is a must-try.

These cookies are hearty and high protein.  Quinoa is a great food for vegans because it is a complete protein..  One cup packs 8 grams of protein.  Also, when you add in the oats and pine nuts that is a heck of a lot of protein in these little cookies.  If you subbed the chocolate chips for dried fruits, you could probably make these a decent little breakfast cookie as well.  🙂  They are kid approved too.  Meadow has been sick the last few days, but she still taste tested them and gave her approval.  I swear that kid will eat anything in cookie or donut form.  For another cookie recipe, click here.

Quinoa Pine Nut and Chocolate Chip Cookies

Prep Time 10 min Cook Time 15 min Serves 18 cookies     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in a large bowl .
  3. Mix the wet in a smaller bowl .
  4. Add the wet to the dry.
  5. Fold in the chocolate chips and the toasted pine nuts.
  6. Drop cookies onto a lined baking sheet and bake for 13-15 minutes. Enjoy!

  1. Thanks for this. Just this morning I was going through the pantry and found some pine nuts that I needed to use up. I think this will be the perfect recipe for that.
    1. Me too. They are so yummy! My mother n law is Turkish and she gets them for me at the Middle Eastern market. So much cheaper that way. :)
  2. I just made these and have one word for them, YUMMY! You'd never know there wasn't any sugar in them, but the chocolate chips make it have that little bit of sweet. Thoroughly enjoyed these, as well as my husband and daughter (5).

  3. This is a great recipe, did them yesterday and I have one question. Instead the spelt flour I used rye flour (didnt have spelt flour) and the cookies turned out a bit soft, is it due to the rye flour? or they are supposed to be soft, what can I do to make them crunchy?
  4. Had some pine nuts in the pantry and thought these sounded so nutty and good. I used almond flour instead of spelt...could that be why mine didn't seem to bind together. On the second batch, I added a bit of egg white to the batter and they held together like a cookie.. I will use the first pan as a crumble to top some homemade ice cream. Just love your recipes!!!
    1. Glad you liked them! Yes, almond flour usually requires some kind of a binding agent. Great idea to add a crumble too!
  5. What can I use to substitute for the spelt flour? I have unbleached multi purpose flour or almond flour, but I did read the comment above about using a binding agent with the almond flour. What do you suggest?
