Cauliflower Popcorn aka Seriously Addictive Snack

Move over kale chips, I think I have found my next snack addition…

Cauliflower Popcorn!  Let me start by saying I hate cauliflower.  It was just one of those bland vegetables that I pushed to the side of my plate.  Not anymore!  This stuff is seriously good and really does taste like crunchy popcorn!  Even your kids will try it.  My 3 year old thinks it is popcorn. 🙂  Here is how I made it.

Cauliflower Popcorn aka Seriously Addictive Snack

Prep Time 10 min Cook Time 45 min

Ingredients

  • 1 head cauliflower chopped
  • 2 T olive oil
  • 4 T white balsamic vinegar
  • salt to taste

Instructions

  1. Preheat oven to 425. 
  2. Spread chopped cauliflower onto a greased pan. 
  3. In a bowl, mix the oil, balsamic and salt. 
  4. With a brush, spread the oil mixture onto the cauliflower. 
  5. Roast in the oven for 45 minutes turning the pieces every 10-15 minutes until all sides are a golden like brown.  Enjoy!

  3. I'm planning on making this tonight but only have regular balsamic vinegar. Will that work? What's the reason for white balsamic?
    1. I love the sweet taste that white balsamic provides, but I have often thought about doing it with regular balsamic as well. I would love to know the results. I have roasted many things in balsamic vinegar, but cauliflower is not one.
      1. Thanks! I might make a run to Kroger for the white balsamic. I'm trying to get my 4 year old to eat more veggies. I've served mashed cauliflower before, she's not been a very big fan. I'm hoping she'll enjoy the texture and flavor of this method better. We moved to north fort worth in October, are you in Dallas?
        1. I am in Dallas! I moved here in August of 2011. We used to live in Las Vegas, but that is no place to raise children.
  4. these are awesome! here's a similar recipe i make and also enjoy. 1 head of cauliflower 2-3 cloves of garlic, peeled and coarsely minced Lemon juice from half a lemon Olive oil Coarse salt and freshly ground black pepper Parmesan cheese (optional) right after its done cooking. This is fantastic especially if you love garlic. The lemon adds a tang and its so delicous!
    1. We used to make a similar Recipe with Red Potatoes at work it was called Greek Potatoes mixed those ingredients together and roast in oven they were good :)
  5. I have Goya's Olive Oil right now--is Goya bad? I just started learning about GMOs and paying attention to nutrition so I haven't switched. Plus, we usually cook with coconut oil and safflower oil (not sunflower!).
    1. Not sure about Goya. My mother in law is Turkish and she gets our olive oil at the Middle Eastern market. Good quality and so cheap!
  6. I made these today and really liked them, but they weren't crispy like I thought they'd be. What's the secret to making them crispy? The only change I made was not putting as much vinegar in the mix I brushed onto the cauliflower. I'll make this again regardless -- this is the only time I've liked cauliflower!
    1. You can try and stick them in the broiler for 5 minutes. That may do it. Happy you liked them regardless. :)
      1. How crispy are they suppose to be. Popcorn crispy? I FINALLY made these today (finally found organic cauliflower) and the flavor is amazing. I am stuffed on cauliflower. SOOO YUMMY! THank you. They weren't crunchy like kale chips or popcorn either. I was afraid if I put them under the broiler after they were roasted, they'd burn... Maybe I didn't cut them evenly enough? or small enough? The inside was like a perfectly steamed veggies and the outside looked just like yours. Any ideas if the crunch should be like popcorn...
        1. They are not going to be as crispy as popcorn, but pretty close. I'm glad you liked the flavor of them. Yay for healthy snacks!
        2. Could not get these crunchy at all! After the regular baking and regular turning throughout the cooking process, and keeping them in an extra 15 minutes AND putting them under the broiler twice, they were still soft and mushy. The flavor was nice and my 5 year old couldn't stop eating them, but they were not at all crunchy/popcorn like in any way. Disappointing.
          1. They don't get 100% as crunchy as popcorn, but they should develop a nice crispiness. I'm sorry they were not what you were expecting.
  7. Roasted cauliflower is one of those things I could seriously eat 5 pounds of. I've never tried it with white balsamic, too. Can't wait to try it! (p.s. I love your blog. Thanks for all you do!
  8. Hi I was wondering of this has to be done with fresh cauliflower or if frozen would work? (sorry if that's a stupid question - I'm quite new to this cooking malarky!) :)
    1. I never have extras. lol. If you need to store it, store it in an airtight container. Sprinkle some rice at the bottom of the container to keep the cauliflower from getting too soft.
      1. Haha. I have to do much of my cooking after bedtime :). Also, with a newborn, I'm hoping this can be one of those things I snack on throughout the day ... Your roasted chickpeas are! Good call on the rice thanks!
    1. It's made from white grapes. I had not heard of it either until a found a recipe that called for it. It's so yummy and great on kale chips too. I bought mine at Sprouts in the same section as the balsamic vinegar.
  9. I'm making this as a side for Thanksgiving. I couldn't find white balsamic. Have you heard of anyone trying regular? Or maybe I should just play it safe and do salt and pepper. Thoughts?
    1. The white balsamic adds a sweetness and acidity. I think regular balsamic would work, but the taste and the look will be a bit different.
