Black Bean and Corn Salad

Ingredients

  • 3 cups black beans
  • 1 cup cherry tomatoes halved
  • 1 red pepper chopped
  • 2 cups corn (please make sure to buy this organic)
  • 2 green onions sliced
  • Juice of 1 small lime
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 T avocado oil
  • 1 avocado sliced
  • salt to taste

Instructions

  1. Throw everything in a bowl and mix together.  That’s it.  Super easy.  Hope you enjoy it!
