High Protein Breakfast Cookies

These High Protein Breakfast Cookies are a must make! I am always trying to think of new ideas for quick breakfasts on the go.  That is where these breakfast cookies come in.

These high protein breakfast cookies are packed with good stuff like rolled oats, hemp seeds, coconut and sunflower seeds.

My daughter and husband loved these breakfast cookies too.  In fact, my daughter loves saying that she gets to eat cookies for breakfast!  This breakfast cookie recipe is also very versatile.  You can really make it your own.

These would be a great little snack to eat before or even after a workout.  They would be great to take on a hike too.  I spent the better part of my twenties backpacking around the country and loved to munch on healthy treats like this one.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients, except the dates, in one bowl. 
  3. Mix all wet in another.
  4. Add wet to dry.
  5. Fold in dates.
  6. Spoon batter onto a lined baking sheet
  7. Bake for about 15 minutes.

  1. I have a picky eater with low blood sugar, so a high protein breakfast is really important -- I tried these, and the whole family loves them. Thanks! One question: do you ever use agave for your sweetener? It is lower on the glycemic index than both honey and maple syrup, so it seems like it would be a good choice for your high protein recipes. But, you also know a lot about ingredients, so I wonder if the omission is purposeful. Again, thanks for the great recipes.
    1. I'm so glad they were a hit! I don't use agave on purpose. I used to use it, and then I read that it's not really as good as it seems.   3. I'm planning to make these later and am excited as I've been using a different recipe for months now that has 12 ingredients, including brown sugar. Looking fwd to a healthier version as I eat them for breakfast every morning! I'm planning to substitute dried cranberries for hemp? Also, trying to think of other ways to get protein in them. Almond butter? Protein powder? Any thoughts ? Thanks so much!!
    1. I think subbing dried cranberries would work out. To add more protein, you can sub 1/4 cup flour for almond meal if you like. Protein powder is another option. I like Garden of Life protein powder. I hope you enjoy this recipe!
      1. Thank you! They are in the oven now! I I only substituted cranberries for the hemp seeds. Can't wait! They smell wonderful!! One more question though: as I put them in the oven my son asked if he could take some to school. I had to say no because they don't allow anything with coconut. :(. Any suggestions? I'm LOVING your recipes by the way!!
        1. Thank you! Coconut flour is not an easy sub. You can try, but I suggest adding a couple extra eggs. Not sure it will work though.

I love that this is a cookie you can, as you put it, “make your own.” I subbed pumpkin seeds for sunflower seeds, honey for maple syrup, and oat flour for wheat flour with the extra egg you suggested. Next batch I may experiment with almond flour and pumpkin in stead of applesauce. Thanks for much!
