Chia Seed Pudding (Vegan and Gluten Free)

This Chia Seed Pudding makes the perfect healthy breakfast!  I am not just talking about a ch-ch-ch-chia pet here.  Have you tried chia seeds?  They are super good for you.

I have only just tried them recently me myself.  Chia is the Mayan word for strength.  These little seeds were a big staple of the Aztec and Mayan diet.

One single serving of chia seeds contains 42% of your daily need for fiber and it packs more omega 3 fatty acids than a piece of salmon.

Chia seeds will absorb up to 12 times their own weight, making you feel full longer.  They are great to throw in smoothies and pudding.

This dish is loosely adapted from Food Babe’s Chia Seed Fruit Salad.  This chia seed pudding would be great served as breakfast or dessert.  It would also be great with some of my homemade granola sprinkled on top.

  1. I'm looking forward to making this yummy looking goodness! Couple of questions though. Would Rice milk work? Do you have any opinions of rice milk? I want to avoid the carrageen I see in almond milk at the store. Also, trader joes sells a big bag of Chia seeds for a good price, but they don't say organic. Would you buy? Thank you.
    1. It is so sad that there is not a cleaner version of almond milk on the shelves. I make my own if you are ever interested. I even have a video on it. https://mywholefoodlife.com/2012/10/09/homemade-almond-milk/ As for the chia seeds, I try to buy them organic. I understand that they are pricey and I think even conventional chia seeds are better than no chia seeds. They have so many benefits! I think rice milk should work pretty well. It may be a bit watery since rice milk is thinner. You might need to use a bit less?
      1. When I do buy almond milk, I buy either SILK or Simple Truth (a Kroger brand) unsweetened almond milk. Neither one have carrageenan in it, which upsets my stomach, so I consider those a cleaner version. Also, I have found organic chia seeds at TJ Maxx, a discount store, for about 1/2 the cost than at Whole Foods or Trader Joe's. Although I don't know that I'll always be able to buy them there, it was a great find!
  2. Really wish I liked chia seeds because of how healthy they are (texture thing), but I can't keep them down :( Maybe I will try them again.
    1. You can grind them into a powder using a coffee grinder. It's still a slightly different texture than regular pudding, but doesn't have the tiny little gelatinous balls in it.
  3. I can't find ground vanilla bean anywhere. I have pure vanilla extract and vanilla bean puree. Can I substitute? If so, what at what conversion?
    1. Yes, you can add 1/2 teaspoon vanilla extract. Keep in mind this since this is not a baked dish, you will be able to slightly taste the alcohol in the extract. That's why I use the vanilla beans. I get mine on Amazon. Can't seem to find them anywhere else!
  4. I've kept chia seeds for almost a year (bought 10 lbs ) with no refrigeration. They have not gone rancid but they don't absorb moisture as well... lately. I'm just adding them to my morning smoothie or to some very low glycemic cookies but I'm going to try grinding the pound or so I still have left in my coffee grinder, as I may not be absorbing them as well.

  6. Since going on a Functional Medicine diet with numerous chia recipes, I have gone off my b/p medicine (first time in 30 years!) and also my HDL is now 71. Normally it's in the 40s. Interesting. Chia pudding, chia breakfast/oats/maple sugar recipes/chia included in smoothies. Very good and good for you!
