Strawberry Ice Cream

Hooray!  Warm weather is here.  At least, in Texas it is.  So it’s time to start breaking out the ice cream maker.  I already have a Cookie Dough Ice Cream and a 5 Minute Banana Ice Cream on the blog.  Now it’s time to add another: Strawberry Ice Cream. Who doesn’t like strawberry ice cream? I know I love all things ice cream, especially strawberry ice cream.

I use canned coconut milk as a base for all my ice cream recipes for a few reasons.  It has that rich taste and mouth feel of real ice cream and it is dairy free.  I have tried using just nut milk, but it never comes out as creamy.  Since this is so rich tasting, a little bit will satisfy you.  You can use either fresh or frozen strawberries for this.  We used fresh organic strawberries since they were on sale the other day at Whole Foods.  They were so sweet and yummy!  Most store bought ice creams contain carrageenan and other unwanted additives.  The organic stuff is always so expensive.  The ice cream maker is pretty affordable and you make your money back pretty quick.  Plus, you can create your own flavors! 🙂

Instructions

  1. Mix the coconut milk, vanilla bean and the sweetener in a bowl.
  2. Pour the contents in the ice cream maker. I used my Cuisinart.
  3. When the ice cream starts looking like it is coming together (after about 15 minutes), add the strawberries.
  4. The ice cream will be more of a soft serve consistency. If you like harder ice cream, you can stick it in the freezer for another 1 1/2 hours. That’s it. Enjoy!

    1. You are very welcome! I had no idea that Kitchaid had an ice cream maker attachment. I have a kitchenaid, but I bought myself a Cuisinart ice cream maker last summer. We love it!

          1. You can split it open and scrap the seeds out! That,'s the most delicious way and the way it should be done! The beans are expensive, so use them the right way. And the scrasped brand you can put in a pot with sugar, just white fine sugar and if you do it every time you'll get homemade vanilla sugar!

  6. We try to avoid aluminum cans, but I saw a comment above that it can be replaced with whole milk. Would I use the same amount as in a can of coconut milk?
    1. Yes, I would use the same amount. I try to avoid cans as well, but I haven't been able to find that rich, coconut milk in anything other than a can. :(

  7. Hi! This sounds fabulous! I was wondering if you have a base recipe for chocolate ice cream made with coconut milk? I have bought the pints of it at the store, but it is SO expensive. So I want to experiment with my ice cream maker, but am having trouble finding a base recipe for plain chocolate. Any tips would be great!
    1. I would try 1 can coconut milk, 1/4-1/3 cup cocoa powder and 3 T liquid sweetener. You could even through in some dark chocolate chunks at the end for some crunch.

I bought the Cuisinart ice cream maker, and when I made the strawberry ice cream, I put it in my freezer, and when I took it out to try it, it is hard as a rock, I cannot even get a spoon into it. It's been sitting out now for over a half an hour and it is still hard as a rock. Have you ever had this problem? Store bought ice cream does not do this. Thanks
    1. All homemade ice creams do that. The store bought ones have a chemical that keeps it from getting hard. I usually pull mine out about 45 minutes before I plan to eat it so it has time to thaw.

  10. Mmmm...I am thinking 1 1/2 tsp almond extract and chopped cherries for Cherry Amaretto...I love that you can add anything to such a simple base!

  11. The coconut milk in my store came sweetened and unsweetened....which did you use (i bout both!!)or was their an option? Can not wait to try!
  12. I bought the exact ice cream maker that you have. Do you think there is enough room to double the recipe in the ice cream maker? how many people does this serve? I have not used mine yet, but I am excited to try all your ice cream recipes!
    1. I have tried doubling and it came out over the sides. It was a big mess. :( I would do one batch. It serves about 4-5 people.
  13. Sorry...another question. I found coconut cream in a can at Trader Joe's. Have you heard of this or recommend it? It states on the can "Thicker and creamier than coconut milk. It is a handy ingredient for everything from curries and stews to pies and puddings". What are your thoughts?
    1. The trader joe's brand is just coconut cream, not milk. I don't think it would work for this recipe because there's no liquid in it. The cream is very tasty, though, and can be used in soups and sauces in place of heavy cream. I also add to smoothies when I have leftovers.
