Coconut Vanilla Overnight Oats.  Oh. My. Gosh.  This overnight oats recipe may be my most favorite so far.  If you love my Coconut Cream Larabars, you will love these overnight oats too!

Coconut butter just makes everything a little better.  It is so rich and delicious!  I actually didn’t use cranberries in my recipe, I just thought the color was great for the photo. I may try adding them to the recipe next time. Raspberries would be a nice addition too.

I love using steel cut oats in my overnight oats, because I like the crunch.  If you like a smoother oatmeal, feel free to use rolled oats instead.  Both will work out fine in this easy overnight oats recipe.

  1. Throw all ingredients in a jar and mix very well.
  2. Store in the fridge overnight and enjoy the next morning.

I make 5 of these at a time and they hold up well. However, if you want to add fresh fruit, add it in right before you eat it. Everything else is fine to sit in the fridge. Enjoy!

  1. If I omit the coconut butter but use coconut milk instead would that work. I have all but the coconut butter, that's why I ask. I do have coconut oil? Would that sub? Thanks! :)
    1. I'm waaaay behind on this, but I've used coconut oil and it's amazing! I throw in walnuts or almond slivers too and let my kids pick between dried apricot, craisins, currants, raisins, dried blue berries or cherries. Possibilities are endless with oatmeal. My oldest likes hers half oatmeal and half cream of wheat.

  3. These look so good, I am loving overnight oats! Try a new flavor almost every night and they are all good,but this one has some of my favorite ingredients, so have to try it soon! Can you use vanilla extract in place of ground beans? I make my own vanilla and it is so much better than the store kind. You have great ideas and is my favorite place to stop for recipes I know will be great!! Thank you!!!!

  5. I'm new to overnight oats - just tried them for the first time less than a month ago. But there are so many wonderful flavor combinations out there, I'm sure they will become a regular breakfast for me. They are especially great because it allows for eating oatmeal in the summer when you don't want a hot breakfast. I'm really looking forward to trying this one (as soon as I get more coconut and make coconut butter).

  7. I haven't tried the ground vanilla beans yet but I was wondering if you have tried vanilla powder? I saw some on Amazon that was organic and I was wondering if you could use it the same way you use the ground vanilla beans? Its called Organic Traditions Vanilla Powder. Just wondering what your thoughts are on powder instead of ground beans. Thanks
    1. I haven't tried it only because I was thinking it was processed somehow. What made me think that, was that vanilla beans are dark, but vanilla powder is white. I could be wrong though. Is there an ingredient list?
      1. Hmmm...That's a good point. For the ingredients it says "certified organic vanilla bean powder." But you're right that vanilla beans are brown so if the powder is white that would be weird. I might just try the stuff you have. Do you know if nonorganic vanilla beans have a lot of chemicals sprayed on them? I don't usually give my boys non-organic items but I haven't seen the ground vanilla beans offered organic.
        1. I don't think so considering they are not grown in the US. Most countries have bans on many of the chemicals that we use in the US.
  8. This looks awesome. I have some in my fridge, can't wait to try it. I didn't have the ground vanilla and couldn't find any at Whole Foods, so I made it without. Do you use the ground vanilla for other things? I'm not sure I can justify ordering it just for this recipe. I had your apple cinnamon oats this morning. So good! Thank you for the recipes!
    1. I hope you enjoy it! I do use the ground vanilla in other recipes, but I also use extract. I use the vanilla beans when I want them to stand out in a recipe. My favorite recipe for the vanilla beans in my Maple Vanilla Almond granola. So good!

  11. I made this one for my husband and the almond butter chocolate for myself. I just made one each to test them out but we both preferred the coconut vanilla recipe (and I'm such a chocoholic so there's something wrong with this picture!). I ended up making and taking a couple of jars with us when we went on our anniversary vacation to the Pacific coast. Saved some money by eating in and knew exactly what was in the food :) As for my issue with the coconut butter hardening on my counter...I kinda forgot how hot it gets back home. We've been in WA state for 5 yrs now so I tend to forget that TX and hell are around the same temp (but I miss it so badly) ;) I just stick it in the sink with hot water and it's good to go.

      1. Well, this morning my coconut butter (and oil) got completely solid! Can't get it out of the jar. guess it got rather cold here overnight!
    1. I'm not familiar with buckwheat, so I don't know. You can try using another grain, but I don't know how it will hold up in the fridge overnight. Maybe try 1 and see? I would love to know if it works.
  12. This kept nicely in fridge for a couple days. I made to eat yesterday for breakfast & just ate it for lunch today. I did like it better warmed up & I added mixed dried berries. DELICIOUS!
