Pumpkin Spiced Ice Cream

Oh yes.  Pumpkin Spiced Ice Cream.  You knew the pumpkin recipes would be coming!    Since it’s still kind of warm here in Texas, I thought I would start off with a cool pumpkin treat: pumpkin spiced ice cream. This pumpkin spiced ice cream is quite good, easy to make, and easy to store.

Much to my surprise, my kids loved this.  They couldn’t stop eating it!  Even my daughter Meadow, who claims to hate pumpkin, ate this up.  If you don’t have an ice cream machine, you can make this recipe into popsicles using these molds.  For those of you wondering if this tastes like coconut, I can tell you that it doesn’t!  Since there are so many spices in here, that drowns out most of the coconut flavor you would normally get.

Prep Time 20 min Serves 4 servings     adjust servings

Instructions

  1. Throw all ingredients in a blender and blend for 1-2 minutes.
  2. Pour contents into an ice cream machine and turn on.
  3. Should take about 15-20 minutes.
  4. Remove and serve.

The ice cream will have a soft serve consistency. If you like a harder ice cream, put it in the freezer for an hour to firm up. If you don’t have an ice cream machine , you can make popsicles using these molds . The recipe makes about 4 servings. Enjoy!

    2. Also you can try it in your blender or food processor thats what i do if your blender is kinda week i recommend a processor. I got a used Cuisinart 11 cup for like 50 bucks!
  1. Sounds amazing! I was wondering how much is in your can of milk? I buy my son coconut milk in a half gallon and have never seen cans. Thank you, can't wait to try this!
    1. The coconut can contains 2 cups of milk. It is far different than regular coconut milk. Much thicker and richer. It's usually found in the Asian food section of the stores.

  2. To the people without an ice cream maker I've read that you can freeze ice cream mixes in ice cubes then put them in a blender! We haven't tried it yet, but totally plan on it.

    1. Thanks! Heck no we don't eat them all! Some of them I give away and some get stashed in my freezer for much later. I just love baking and the challenge of making cleaner desserts. :)

          1. Awesome! Will do. You inspired me to buy an ice cream maker. I just pick up the kitchenaid attachment ice cream maker to go on my mixer. I can't wait to try this out! Last night I went to buy ice cream for my dad because my parents were coming over for dinner. All the ice cream had artificial vanilla flavor! I couldn't take it anymore...so Icame right to your blog for a recipe and I am going to make my own!

  5. We just made this for dessert tonight and wow! It was awesome. Last year I was addicted to DQ pumpkin blizzard but now that I am a little bit more knowledgeable of what processes their "food" goes through, I would never touch it again! I have to say that this recipe was very tasty and blows the dq recipe out of the water. I wonder what it would be like with some dark chocolate/vegan chips in there.
